Cheese and Ham Pie

Pie recipe

Ham cheese and potato pie.

Quantities of ham and cheese are your choice.

I used four potatoes

1 large onion

thick ham

1 apple

salt and pepper

Danish blue cheese

Pastry

For this pie recipe, the pastry was made by weighing 225 grams of flour and adding a teaspoon of salt. I broke an egg into the flour and stirred it until the egg was absorbed and it looked like a thick paste. In 100mls of water I added 75grams butter. I heated the water and butter until the butter was melted the poured it into the flour/egg mix. Stirring quickly the pastry started to form into a smooth ball. I then flattened it out and refrigerated it for twelve hours.

Making the pie

Next morning, I started by putting the sliced potatoes on to boil in salted water. After ten minutes boiling I added sliced onion to them. Another ten minutes and they were cooked. I took them off and let them get cold.

Next I cut up the thick ham into bite size pieces, rolled them in flour and started frying them. Once they were nicely browned I added some of the potato water and the cooked onions. I simmered this for twenty minutes then took it off the heat and let it cool down.

The pastry was quite hard to roll out after being in the refrigerator all that time but it soon flattened out. I then greased the pie dish and lined it with the pastry.

Then the cooled ham mixture was placed in the pie, followed by sliced potato, then Blue cheese was dotted over the top. I then added sliced apple as a final layer. I rolled out the pastry for the top of the pie, wet the rim with milk and placed the top on. I cut a slot to allow the steam to escape, painted the top with milk and put it in the centre of the oven pre-heated to Gas mark 7, or 210C.

After thirty minutes it was cooked. And it was delicious.Try this pie recipe. I know you'll love it.
