A few months back I attended a children's birthday party at a neighbor's house, and instead of traditional pizza, they served pizza muffins! I'd never heard of such a thing, but all of the kids ate them up, and naturally I had to ask for the recipe. Here is the recipe:
- 3/4c flour
- 3/4tsp baking powder
- 3/4c milk
- 1 egg, lightly beaten
- 1c pepperoni, chopped
- 1Tbsp italian seasoning
- pizza sauce, for dipping
- Preheat oven to 375 degrees and line 8 muffin cups. In a large bowl mix flour, baking soda, and italian seasoning together. Mix in egg and milk. Then add pepperoni and cheese. Let stand for 10 minutes.
- Stir batter and divide into muffin cups. Bake 20-25 minutes.
- Serve with warmed up pizza sauce, and eat up!
This recipe is extremely versatile too, in the sense that you can add pretty much anything you would normally get on your pizza to the batter, to suit your taste. If your child is a stubborn eater it's a good way to sneak in some veggies. My toddler especially loves it when I make these because he loves to dip them in the pizza sauce!
