Poor Boy Simple Meatloaf Recipe

Homemade meatloaf is a classic favorite. A lot of people think of meatloaf as something to eat at mom’s house or grandma’s house. Actually meatloaf is very simple to make and is inexpensive also. Meatloaf can be made a hundred different ways and a recipe can be found for every taste and every budget. The recipe below is for “Poor Boy Meatloaf”. It is a meatloaf that is so simple to make that anyone can do it and it only requires several inexpensive ingredients that you probably already have in your kitchen.

You will need:

1 ½ pounds ground beef

Ketchup

2 large eggs

3 slices white or wheat bread

BBQ sauce

Seasoned meat tenderizer

Non-stick spray

1 teaspoon sugar


Before you start the meatloaf, make sure the 1 ½ pounds of ground beef is fully defrosted. If you decide to defrost the meat in the microwave, take care not to over- defrost it to the point that it comes out brown. Also, preheat the oven to 350 degrees.

While the meat is defrosting, you can start preparing the bread. Tear up three slices of white or wheat bread, into the smallest possible pieces. You can even use the end slices with the crust on them. It will work just fine.


Place the defrosted meat and bread pieces in a large bowl. Crack the 2 eggs and add them to the bowl also.

Add ¼ cup of ketchup and ¼ cup of BBQ sauce to the mixture. Sprinkle in seasoned meat tenderizer.

Next, you will need to mash and grind the mixture together with your fingers. It is recommended to wear gloves if you don’t want a lot of raw meat under your fingernails. Continue working the mixture for several minutes, until you can no longer feel any lumps in the meat. It should be a soft, smooth mixture.

Spray a baking pan with non-stick spray. Be sure to use a pan with sides high enough to keep the grease from spilling out. Meatloaves can produce a lot of grease. Pour the mixture into the center of the pan. Shape and form the mixture into a rectangle-like shape. Cover tightly with aluminum foil. This will help to seal in the flavor.


Let the meatloaf bake for 15 minutes. Meanwhile, blend 3 tablespoons of ketchup and 3 tablespoons of BBQ sauce into a small bowl. Stir in one teaspoon of sugar to the mixture. Brown sugar works best but white can be used also. Take the meatloaf out and spread the sauce mixture on top of the meatloaf.

Cover the meatloaf again with the aluminum foil. Place the meatloaf back in the oven for another 15-20 minutes.

Remove the meatloaf after the allotted time, or until browned all the way through. Let cool and enjoy!
