A Hearty Meal

There are so many chicken recipes out there, that I decided to talk about one of my favorites that is in a casserole form. It is not in the last bit dry after being cooked. This recipe is super easy and great for a crowd. If you are a fan of chicken and a fan of casseroles, then boy do I have the recipe for you. It is a perfect recipe if you need prepare a dish that can be made ahead of the party or the of event that you are planning for. This recipe is just one of those recipes that you can take anywhere. A lot of the casseroles that are made like this, have onions and some have celery. Those two ingredients that I do not like. The recipe that I have and make doesn't call for these ingredients.

This can be a a meal in and of itself or you can serve it with some potatoes, maybe one more vegetable as well as a salad with some big bulky bread. One thing that I don't think ever think about making, is deviled eggs.

This casserole is better tasting in my opinion at least one day after it has been made and the flavors have had more time to blend. As I mentioned before, this casserole can be used in a great meal-in-one dish. So, this makes it a great recipe to make as a casual dinner with your friends.

Bonus Recipe

Another favorite side dish is a recipe that I have for fancy green beans. You take two cans of whole green beans wrap the beans with a strip of bacon and put the seam side of the bacon on the bottom of the casserole dish. The beans and bacon can be secured with a toothpick. After the bean bundles have been put in the casserole dish take a small Italian dressing and cover the beans and bacon. Bake at 350 degrees until the beans are warm and the bacon is cooked.

This is one of mine and my mom's favorite recipes. This recipe is good without any poppy seeds but, the poppy seeds are a nice touch to the casserole. You can always just put them on 1/2 of the casserole. If you are going for a job interview, please note if you a getting a drug test, poppy seeds can test positive for opiates up to two days.

This recipe calls for canned chicken but, in my personal opinion, the canned chicken tends to be more salty versus buying a bag of frozen chicken. Then you can just boil the chicken in water on the stove top until the chicken is done. I always buy boneless, skinless chicken breasts. After the chicken is boiled, I try to cut it up in little pieces and put it apart the best that I can to let it cool down quickly. I prefer more of a shredded style to the chicken rather than just having chunks of chicken. I like to mix this casserole up as quick as possible because, the casserole tastes better the longer that the flavors have to blend.

There's even more flavor if you buy the chicken that has the bone in it and you can boil the chicken on the stove top and then take it off the bone. You can save the chicken broth and put it in the freezer and save it for another use. Remove the cooled chicken from the bone and chop the chicken into pieces and set aside. Some recipes of chicken casserole call for celery or green peas, water chestnuts and sometimes corn. I don't put anything like that in this recipe. I like this recipe exactly the way it is.

Another great thing about this recipe, is the melted butter that you use to soak the Ritz crackers with. After the ritz crackers have soaked up the butter you sprinkle them across the casserole dish. You bake it for a few minutes and the casserole dish that I use is see through and you can see the casserole boiling in the oven. Using a glass casserole dish is a great way to present this dish.

  • 1 can cream of chicken soup
  • 1 (8oz) sour cream
  • 40 ritz crackers, crushed
  • 1 stick butter, melted
  • 2 teaspoons poppy seeds, sprinkled over the top of the casserole

Yummy Preparation

  1. Cook chicken and debone, cut into bite sized pieces and put in the bottom of a greased 13 X 9 casserole dish.
  2. Mix the cream of chicken soup and sour cream and mix it with the chicken.
  3. Melt the butter and add the crushed Ritz crackers stir together for a few seconds to let the crackers absorb the butter.
  4. Sprinkle the poppy seeds as desired on top of the casserole. You can also just put it on 1/2 of the casserole.
  5. Bake for twenty-five minutes at 350 degrees. The casserole is done when the top of the crackers are golden brown.

Not many ingredients

The recipes that I tend to make and the ones that are my favorites, are the ones that do not have many ingredients and don't take long to make. I try to make recipes that are easy as well.

This chicken casserole has poppy seeds on the top of the dish. If you need to, you can just leave them off.

It is a great flavor to have such few ingredients. This can be great served as left overs.
