Pork Tenderloin Pasta

Updated on October 20, 2011

Pork Tenderloin Pasta

This recipe is courtesy of an ex-boyfriend.  He really knew his way around the kitchen.  Enjoy.

4 boneless pork chops

1 small can mushrooms or fresh chopped mushrooms

garlic and onion to taste

olive oil

vegetable spiral pasta

jar of alfredo sauce

mozarella cheese for garnish

Heat olive oil in saute pan. Put vegetable spiral pasta in salted water to boil. Saute garlic and onion and mushrooms in heated oil. Cut pork into thin strips. Add pork to garlic and onion and mushrooms. Cook until pork is tender. Drain pasta. Add jar of alfredo sauce and pork to drained pasta. Mix thoroughly. Add mozarella cheese to the top of each served portion of pasta. Serve with a fresh garden salad. Yummy.

I'll have to try this, I'm due for a pasta revolution here to break the monotony!
