Slow Cooker Pot Roast Recipe

This slow cooker pot roast recipe is one of the easiest meals you will make. And possibly the yummiest. It is amazingly tender and smells irresistible. If you are a busy person and still want to cook up a wholesome meal for the family, this is the perfect recipe for you.

I love making pot roast. Not only does it use the cheapest cuts of beef, but it's also one of the tougher part of the cow. Cooking it slowly in a crock pot allows for the meat to soften and fall apart, which also results in a most moist pot roast compared to roasting it in the oven.

It is even easier to prepare. I could prepare it in the morning and come home to a delicious meal.

For this recipe, I braised this piece of meat for 9 hours on low in the slow cooker. I literally threw everything in the slow cooker before heading out for work. Although you're supposed to "set it and forget it" but I couldn't help thinking about it throughout the day. I knew I was going to come home to a kitchen filled with that aroma. Slow cooked roast beef waiting to be devoured.

To go alongside the beef, you can serve it with some mashed potatoes, sweet potatoes, or any other vegetables.

It does not really get any easier than this.

I used a chuck roast for this meal, but a rump roast or any beef roast would work just as well.

Ingredients: Pot Roast Slow Cooker

  • 1 grass-fed beef chuck roast (2-3 lbs)
  • 2-3 cloves of garlic
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic salt
  • 1/2 teaspoon of red pepper flakes
  • 1 cup low sodium beef broth
  • 1 cup water
  • 2-3 sprigs of thyme
  • 2 bay leaves
  • 1 white onion

Tip: Cooking with Slow Cooker

When cooking with a slow cooker, you don't need to add too much liquid as the covered lid will generate enough steam. After the food is cooked, transfer the sauce to a pan and create a delicious gravy.

Instructions: Pot Roast Slow Cooker

**Extra step to bring out more flavor: In a large pan set to medium/high heat, pour 1 tablespoon of olive oil. Sear the meat on both sides until caramelized. This step takes about 10-15 minutes and is optional. If you have time, do this before putting the meat in the slow cooker and it will take the chuck roast to a higher level of flavor.

As we all know, the beauty of using a slow cooker is to throw everything, set it and forget it! So the instructions are quite simple. Trim the excess fat on the meat. Place the roast in slow cooker. Mix the ingredients in a bowl and pour over roast. Place a couple of sprigs of rosemary, 2 bay leaves on top. Cook on low for 7-9 hours, or high for 5 hours.

If you plan on adding vegetables, add it in the last 2 hours. If you added in the beginning with the meat, the vegetables will be too soggy.

      One of my favorites, hard to find grass fed roast around here, I get tatonka though, at the farmers market in the summers. I'm growing thyme this year, can't wait to try it and also with the pan fry!
