Prepare Tasty Dishes with Leftovers

Confused with what you can do with the leftovers? Don’t worry… Here I give you some quick and easy ways to prepare tasty dishes with them. They are sure to delight your family with a lip-smacking taste.

1) Idly Upma

Many of the homemakers would have come across this situation. They make idly for the breakfast and at the end of the day they will have some idlies left. With them you can easily make a delicious evening snack for your family. Your kids or anyone in your family will love this scrumptious dish. Let’s see the ingredients and instructions for preparing it.

Ingredients:

Leftover idlies – 5 nos

Onion – 2 nos (chopped)

Bengal gram – 2 tbsp

Urad dhal – 1 tbsp

Mustard seeds – 1 tbsp

Dry chillies - 4 nos (small)

Turmeric powder – ½ tbsp

Oil - 3 tbsp

Curry leaves - As you require

Salt - As you require

Instructions:

1) Cut the idlies into very small pieces and keep them aside.

2) In a pan heat the oil, then put mustard seeds, bengal gram, urad dhal, chopped onions, dry chillies, turmeric powder and curry leaves and fry them till they turn into golden brown.

3) Then add idlies and stir well.

4) Add salt to taste and close the pan with a lid.

5) Cook for 5 minutes.

Now the tasty idly upma is ready to serve. Coconut chutney (optional) will be the best accompaniment for this dish.

2) Seasoned Rice

If you have cooked rice left at the end of the day, just soak it in water and leave it for overnight. You can have a tasty dish for lunch with this soaked, leftover rice.

Ingredients:

Soaked leftover rice – 1 cup

Bengal gram – 2 tbsp

Urad dhal – 1 tbsp

Mustard seeds – 1 tbsp

Dry chillies - 3 nos (small)

Turmeric powder – ½ tbsp

Oil - 2 tbsp

Curry leaves - As required

Salt - As required

Instructions:

1) Drain the water completely from the rice by squeezing it. The rice should not be very watery.

2) Heat the oil in a pan, then put mustard seeds, bengal gram, urad dhal, dry chillies, turmeric powder and curry leaves and fry them for 2 minutes.

3) Now add the soaked rice to the pan and mix well.

4) Add salt as you need and cook it for 5-7 minutes.

This dish can be served with spicy pickle or papad.

3) Spicy Chapathi Curry

With leftover chapathis, you can easily make a delicious evening snack. Let’s see how to prepare it.

Ingredients:

Leftover chapathis – 4 nos

Chopped tomatoes – 3 nos

Chopped onions – 2 nos

Mustard seeds – 1 tbsp

Chilli powder – 4 tbsp

Turmeric powder – ½ tbsp

Ginger garlic paste – 2 tbsp

Oil - 5 tbsp

Curry leaves - As required

Coriander leaves - As required

Salt - As required

Instructions:

1) Cut the chapathis into small pieces and keep them aside.

2) Heat oil in a frying pan, then put mustard seeds, onions, tomatoes, curry leaves, turmeric powder and ginger-garlic paste. Add required salt to this mixture so they cook quickly. Fry it for 4-6 minutes.

3) Then add chilli powder and adequate amount of water.

4) Bring the mixture to boil and cook for 2 minutes.

5) Now add chapathi pieces to this curry and cook them for another 3 minutes.

Your spicy chapathi curry is now ready to eat. Garnish it with chopped coriander leaves.
