Pumpkin Pancakes For Fall

Fall is here and that means so are the pumpkins. Here is a wonderful recipe to use after you carve that pumpkin. you can use canned pumpkin if you would like but fresh taste the best.

Prep time: 15 min
Cook time: 30 min
Ready in: 45 min
Yields: 8 servings

Ingredients

  • 2c cold milk
  • 2c pumpkin puree
  • 2 eggs
  • 4 Tbsp melted butter
  • 4 c all-purpose flour
  • 4 Tbsp brown sugar
  • 2 Tbsp maple syrup
  • 4 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp vanilla
  • 2-3 tsp pumpkin pie spice
  • 2 tsp ground cinnamon
  • 1 tsp salt
  1. Mix the wet ingredients together.
  2. Sift in dry ingredients and mix well
  3. With 1/4 c Scoop or measuring cup Pour onto hot pan with butter or oil.
  4. Cook for 3 to 4 minutes on each side on medium heat.
  5. Top with syrup you can also add pecans if you would like.

      Trish, I'm a big pumpkin fan and I've tried out all kinds of recipes but so far I haven't actually had one for breakfast. So this will definitely go into my fall recipe collection. I've published some unusual pumpkin recipes myself which you might want to look at.

      Wow, definitely going to have to try this as I'm a big fan of both pumpkin pie and pancakes, so this "fusion" should be just the ticket!
