Quesadilla Makers and Pancakes!

Perusing through the manual that came with my quesadilla maker, it said you could make pancakes in it! Whoa! Pancakes are my favorite food. Or at least one of my favorite foods.

After the first test batch, I was hooked! Quesadilla makers make pancakes so much better than skillets or grills. They work on the same principle as waffle makers. It's a no-brainer!

Plug in the seasoned quesadilla maker, pour in a half cup of pancake batter and 3-4 minutes later lift the lid and scoop out a perfect pancake!

To season a quesadilla maker all you have to do is put a teaspoon of oil on the griddle when it's cold, then take a paper towel and coat both sides with the oil. Turn on the quesadilla maker and when it's hot it's ready!

Yes, you can use the quesadilla maker to make quesadillas too! And french toast, and paninis and a few other things. I'm ordering a second quesadilla maker so I can make breakfast twice as fast. Or lunch or dinner. These babies are great!

Cinnamon Spice Pancakes

This is my own fabulous recipe and I would eat these pancakes every morning if I could. I usually have them on Sunday brunch or dinner. I'm too lazy to make them for breakfast.

Mix dry ingredients:

1 cup all purpose flour (may mix half and half with whole wheat flour)

1/4 cup brown sugar

2 1/2 teaspoons of baking powder

1/2 teaspoon of cinnamon

1/4 teaspoon of nutmeg

1/4 teaspoon of pumpkin pie spice

Mix wet ingredients:

1/2 cup applesauce (or use one applesauce cup from a pack)

1/2 cup milk

1 or 2 Tablespoons of melted butter

1 slightly beaten egg

Combine the wet ingredients and the dry ingredients. Mix just until moist, don't over mix.

Pour 1/2 cup of pancake batter onto the quesadilla maker plate and close the lid. Remove the pancake after 3 to 4 minutes. Add syrup and enjoy!

Gingerbread Pancakes

These are my all time favorite pancakes. If you are a fan of gingerbread, here's a very easy way to enjoy this great flavor! Fortunately for me living in Austin, I can buy a great version of this mix pre-made at my local grocery store!

This recipe is from The Food Network's Magnolia Cafe's Gingerbread Pancake Version.

Ingredients

  • 3 eggs
  • 1/4 cup brown sugar
  • 1 cup buttermilk
  • 1/2 cup water
  • 1/4 cup brewed coffee
  • 2 1/2 cups white unbleached flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cloves
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground ginger
  • 1 tablespoon ground nutmeg
  • 4 tablespoons butter or margarine, melted

Directions

In a large bowl, mix eggs and brown sugar until well combined. Add buttermilk, water and brewed coffee, and stir to combine. In another large bowl, sift together the flour, baking powder, baking soda, salt, cloves, cinnamon, ginger, and nutmeg. Add the liquid ingredients to the flour mixture and stir just until combined. Stir in the melted butter.

Pour 1/2 cup of pancake batter onto the quesadilla maker plate and close the lid. Remove the pancake after 3 to 4 minutes. Add syrup and enjoy!

And now for something truly decadent...

Bananas Foster French Toast

A Paula Deen recipe from the Food Network

Ingredients

  • 4 large eggs
  • 1 cup heavy cream
  • 1 teaspoon ground cinnamon
  • 8 tablespoons butter, divided
  • 8 large croissants, halved
  • 1/2 cup dark corn syrup
  • 1/2 cup firmly packed brown sugar
  • 1 cup maple syrup
  • 1 cup chopped pecans
  • 6 ripe bananas, halved crosswise and lengthwise
  • 1 teaspoon rum extract

Directions

In a shallow dish, whisk together eggs, cream, and cinnamon. In a quesadilla maker, melt 1 tablespoons butter over medium-high heat. Dip each croissant halves in egg mixture to coat both sides. Using a fork, remove croissant from egg mixture, letting excess mixture drip off. Place croissant halves in quesadilla maker. Cook 2 to 3 minutes per side or until lightly browned. Repeat procedure with remaining butter and croissant halves. Set aside and keep warm.

In a large skillet, combine corn syrup, brown sugar, maple syrup and pecans. Bring to a boil over medium-high heat. Reduce heat, and simmer for 2 minutes. Add banana halves and rum extract. Coat with the syrup mixture, and simmer 1 minute. Spoon over French toast. Serve immediately.

    Oh yes, I put pecans in them from time to time. I love pecans. It is the state tree of Texas, you know.

    Choc chip pancakes? I've never tried them, but I'll bet you can just put any kind of pancake, waffle, or muffin batter in a quesadilla maker and have it come out right.

    Yes, Om, a normal skillet will work too, LOL.
