Quick Berry Pie

Fast and Tasty/Short but Sweet

 

 

Well here I go again...snowed in and cooking, just what I need! But love to cook so am practicing. This one is super, duper easy , really tasty and as you can see lately my lazy way of cooking for one...:O)

 

one graham cracker pie crust... you can either crush up the crackers, add melted butter and place in pie tin , cook in oven at 350 F. for 10 min. or so.

or you can buy one at the store already to go (here is where the fast timing comes in).

Fresh berries..6-8 cups. add sugar to taste and stir.

I had frozen blackberries in the freezer so I used them, but you can use any kind I would imagine,even the canned pie kind...

 

OK..... so now whip some whipping cream like normal, with sugar and vanilla.

Here again you could use prepared whipped cream .

Place the berries in the pie crust, cover with the whipped cream.

Serve each piece on a plate with mint leaf on top and some of the berries...yummmy.

 

 

I am thinking it could be frozen, then eaten also? what do you think? It may not make it to the freezer here though LOL ???? :O) :O) Hugs G-Ma

      I really hate things that are too time consuming when it comes to cooking. This recipe looks wonderful and for summer months it is a great idea. Actually, for holidays too, it'll make guests think you spent a long time cooking. Thanks for sharing this.

      That does sound good and the only time I have a black cup of coffee is with a good pie. I am sure it could be frozen without the whipped cream. Maybe that could go with a dollop of whipped cream before eating and maybe a spray of non fat butter spray before the fruit would keep it from seeping into the crust so easily before freezing, if there's any left.

      I love that graham cracker crust (much better when you make it yourself and easy to do) I do a banana cream pie with it. Great hub, I'm hungry. Peace and Love!! Tom

      This would also work with sliced strawberries.
