Cowboy Burger Recipe with Grilled Pickles and Crispy Onion Straws

40 mins to make, serves 4

Ingredients

Meat

  • 1 1/4 lbs Ground beef
  • 4 tsp Mccormick grill mates smoky montreal steak seasoning

Produce

  • 4 Lettuce, leaves
  • 1 Onion, medium

Condiments

  • 1 Dill pickle
  • 1/4 cup Mayonnaise
  • 2 tbsp Stubbs original bar-b-q sauce

Baking & Spices

  • 1 tbsp Brown sugar, packed
  • 1/2 cup Flour
  • 1/8 tsp Mccormick black pepper, Ground
  • 1 tbsp Mccormick chili powder
  • 1/4 tsp Salt

Oils & Vinegars

  • 1 Vegetable oil

Bread & Baked Goods

  • 4 Kaiser rolls

Dairy

  • 4 slices Cheddar cheese, mild

INSTRUCTIONS

BBQ Mayonnaise

  1. Mix mayonnaise and Bar-B-Q Sauce in small bowl until well blended.
  2. Cover. Refrigerate until ready to serve.

Onions

  1. Mix flour, salt and pepper in large resealable plastic bag.
  2. Add onion; toss to coat well.
  3. Pour oil into deep fryer, large heavy skillet or saucepan, filling no more than ⅓ full.
  4. Heat oil on medium-high heat.
  5. Carefully add onion rings to hot oil. Fry 4 to 5 minutes, turning once to brown evenly, until onions rings are golden brown.
  6. Drain on paper towels. Set aside.

Burgers

  1. Mix Seasoning, chili powder and brown sugar in small bowl.
  2. Shape ground beef into 4 patties.
  3. Coat surface of each patty evenly with the rub mixture.
  4. Grill over medium heat 4 to 6 minutes per side or until burgers are cooked through (internal temperature of 160∫F).
  5. Add cheese slices to burgers 1 minute before cooking is completed.
  6. Grill pickle slices 2 to 3 minutes per side or until grill marks appear.
  7. Toast rolls on the grill, open-side down, about 30 seconds, if desired.
  8. Serve burgers on rolls topped with grilled pickles, Crispy Onion Straws and lettuce. Serve with BBQ Mayonnaise.

INSTRUCTIONS

  1. Chicken Burgers:
  2. Preheat the pan and the oil on medium heat. Combine the ingredients for the chicken burgers in a mixing bowl and mix well. Scoop out the meat mixture (as big as you want the burgers) and form patties with your hands. Cook the chicken burgers, on medium heat, for about 10 minutes of each side.
  3. When the chicken burgers are fully cooked, pour some buffalo sauce in the pan and and cook the burgers in the sauce for about a minute on each side.
  4. To assemble the sandwiches: spread some ranch dressing on the bottom bun, add some blue cheese crumbles and tomato slices. Add the buffalo chicken burger and top it off with some green onion and Mozzarella cheese slices.

  • 1 lb Ground chicken

  • 1 Avocado, large ripe
  • 1 chopped clove Garlic
  • 1 Poblano or jalapeno pepper

  • 1/3 cup Panko crumbs or almond meal
  • 1/4 tsp Pepper
  • 1/2 tsp Salt

  • 1/4 cup Cilantro, fresh
  • 2 Garlic cloves
  • 2 tsp Jalapeno
  • 1 Lettuce
  • 1 Red onions
  • 1/2 cup Yellow onion

Condiments

  • 1 cup Guacamole

Baking & Spices

  • 1 Kosher salt and freshly cracked black pepper
  • 1 tsp Paprika

Nuts & Seeds

  • 1 tsp Cumin, ground

Bread & Baked Goods

  • 4 Burger buns, toasted

Dairy

  • 1/3 cup Cheddar cheese
  • 1 Sour cream

INSTRUCTIONS

  1. Prepare an indoor or outdoor grill over medium heat.
  2. Transfer the ground chicken to a medium bowl. Add in the onion, cilantro, garlic, jalapeño, cumin, paprika, cheddar cheese, salt and freshly cracked black pepper. Using your hands, incorporate everything together. Make sure everything is evenly incorporated without over mixing the ground chicken.
  3. Form the mixture into four 1/2"-thick patties. Grill burgers over medium heat until cooked through, 5-7 minutes per side.
  4. Serve each patty in a burger bun topped with guacamole and sour cream and any additional toppings needed.

  • 1 1/4 lbs Ground chicken

Produce

  • 2 cloves Garlic
  • 1 Lemon
  • 1 Red onion, small

Canned Goods

  • 2 tbsp Tomato paste

Condiments

  • 2 tbsp Honey
  • 1 tbsp Hot sauce
  • 3 Rounded tablespoons sweet pickle relish
  • 1 tbsp Worcestershire sauce

Baking & Spices

  • 2 cups Cabbage mix
  • 1 tbsp Grill seasoning
  • 1 Salt and pepper
  • 1 tsp Sugar

Oils & Vinegars

  • 3 tbsp Olive oil, extra-virgin

  • 4 Cornmeal kaiser rolls

  • 1 tbsp Butter

Directions

In a small skillet over medium heat, melt butter.

Add chopped onions, garlic and tomato paste and sweat them for 5 minutes to soften and sweeten.

Sprinkle in sugar and remove from heat. Cool in a bowl, 5 minutes.

Add tomato paste mixture, Worcestershire, hot sauce to bowl and combine.

Add chicken to the bowl then grill seasoning and combine the burgers well to evenly distribute the flavors and form 4 patties. Wash up.

Heat 1 tablespoon extra-virgin olive oil, a turn of the pan, in a nonstick skillet over medium-high heat.

Cook patties 6 minutes on each side.

Combine the honey, lemon juice, and remaining extra-virgin olive oil in a bowl.

Add relish, cabbage mix and sliced onions and season with salt and pepper. Toss the slaw to coat and reserve.

Serve burgers on bun bottoms topped with slaw and bun tops.

Portuguese Chicken Burgers

30 mins to make, serves 4

Ingredients

Meat

  • 1 Birds eye red chilies
  • 4 Chicken thigh, fillets

Produce

  • 5 Garlic cloves
  • 1 Lettuce
  • 2 tsp Onion powder
  • 1 tbsp Oregano, dried
  • 1 Red bell pepper/ capsicum, large
  • 2 Tomatoes

Condiments

  • 1/2 cup Egg mayonnaise, whole
  • 3 tbsp Peri peri sauce

Baking & Spices

  • 1 Black pepper
  • 3 drop Food colouring, red
  • 2 tbsp Paprika
  • 1 1/2 tsp Salt
  • 1 1/2 tsp White sugar

Oils & Vinegars

  • 4 tbsp Malt vinegar
  • 1 tbsp Olive oil
  • 3 tbsp Vegetable oil

Bread & Baked Goods

  • 4 Soft rolls

  • 1/4 cup Sour cream

INSTRUCTIONS

  1. Place the Peri Peri Sauce ingredients in a food processor or blender and whizz until smooth. Pour ½ cup into a ziplock bag with the chicken. Marinate for at least 3 hours, or up to 24 hours.
  2. Mix together 3 tablespoons of the Peri Peri Sauce with the Pink Sauce ingredients. Set aside.
  3. Meanwhile, heat 1 tablespoon of olive oil in a fry pan over medium high heat OR the BBQ. Add the chicken and cook each side for 4 to 5 minutes, or until dark golden brown. Remove from fry pan onto a plate, cover loosely with foil and allow to rest for 5 minutes.
  4. To make the burgers, split a roll in half and top with lettuce, tomato, chicken then Pink Sauce. Drizzle with the residual Peri Peri Sauce if desired. Serve with wedges.

Caprese Chicken Burgers

25 mins to make, makes 4 burgers

Ingredients

Meat

  • 1 lb Ground chicken, lean

Produce

  • 8 Basil, fresh leaves
  • 1 Tomato, slices thick

Condiments

  • 1 tsp Lemon juice, fresh
  • 1 tbsp Mayonnaise, light
  • 1 1/2 tbsp Pesto, prepared

Baking & Spices

  • 1/4 tsp Black pepper
  • 1/4 tsp Kosher salt
  • 1 Pinch Salt and pepper

Bread & Baked Goods

  • 4 Buns

Dairy

  • 1/3 cup Greek yogurt, plain non-fat
  • 4 thick slices Mozzarella cheese, fresh

Instructions

  1. In a large bowl combine the ground chicken, pesto, salt and pepper with your hands until combined.
  2. Form the meat into 4 equal sized patties.
  3. Preheat grill or skillet to medium high heat.
  4. Spray or oil the grates of the grill or the skillet generously.
  5. Cook the chicken burgers for approximately 4 minutes per side depending on how thick they are.
  6. While the burgers are cooking prepare the basil aioli.
  7. Whisk together all of the ingredients for the aioli in a small bowl and refrigerate until ready to serve.
  8. About a minute before the burgers are done, place the buns cut side down on the grill and toast them until lightly brown.
  9. Assemble the burgers on the toasted buns and top with a slice of fresh mozzarella, a slice of tomato, 2-3 basil leaves, and some of the basil aioli spread on the top half of the bun.
