Quick RAW Vegan Snack

Healthy Vegan Snack

Snacking does not have to be unhealthy, you can make the most delicious raw vegan snacks in minutes. Here is an example of a very tasty, low cost snack that you can make at any time of the day. Mango salsa and cucumber dippers are the perfect mid morning or mid afternoon snack.

Ingredients

¼ large ripe mango

2 medium tomatoes

1 tsp black pepper

2 Medjool dates

1 tablespoon water

Method

Chop all the ingredients into small chunks and put them in a blender. Blend until smooth with small chunks. You don’t want it to be too smooth, leave some chunks in it. Pour the salsa into a small dish and add the black pepper and stir.

Cut ¼ of a large cucumber and chop the cucumber into thin dipping strips. Arrange the cucumber dippers around a plate with the mango salsa in the middle of the plate.
