Quick Easy Leek Potato Soup Recipe Ingredients

  • 1 lb (500g) potato's About 8
  • 1 Lb (500g) Washed and sliced leeks
  • 3 1/2 Pints (1.5 lt) veg stock
  • 1 small diced onion
  1. Gently fry the diced onion in a little rapeseed oil in a heavy based pot.
  2. Peel your potatoes and dice them in to about match box sized pieces / chunks.
  3. Add the diced potato in the pot with the onion and fry for 2 mins. Add all of the veg stock bring to the boil and reduce to a simmer.
  4. Wash your leeks thoroughly and add the to the soup pot too. Cook for about 20/30 mins until the potatoes are cooked.
  5. Remove from heat and blitz (liquidize) with a hand stick blender, Season with salt and pepper and serve.

Cream Of Mushroom Soup Recipe

This recipe can be made with any mushrooms even dried wild mushrooms that have been soaked to soften them back up. This soup is easy to make but packed full of flavour and goodness

Quick Cream Of Mushroom Soup Recipe


3oz butter

1 large diced onion

1 Lb sliced mushrooms

2 cloves garlic crushed

2 pints veg stock

1 small pot double cream

Cream Of Mushroom Soup Recipe

1, In a havey based pot/sauce pan melt your butter and add the onion and cook until onions are soft.

2, Add the sliced mushrooms and crushed garlic and cook these for 3 to 4 mins.

3, Now pour in your veg stock and bring to the boil and boil for approximately 10 mins, or until mushrooms are soft.

4, Pour in your cream and bring back to the boil now remove from the heat.

5, With a stick blender or in a food processor to liquidise your mushroom soup,

6, Add salt and pepper to taste and serve.

      Thank you all. I know these soup recipes may seem very basic which they are but. I feel there is not much point over complicating recipes as long as you get a good end result that's full of flavour. But I would say that recipes can always be adapted to our own tastes and what ingredients we have at the time. Thanks
