Cookies Made From Cake Mix

I love finding easy ways to make great tasting foods. Whether they are sweet or savory, saving time is always a plus when you are a busy, full time working mom of two. So when I was invited over to a friends house for a little get together, I didn't want to go empty handed so I decided to make some cookies. I was in a hurry and didn't want to spend lots of time searching for and measuring ingredients, so I turned to a box a cake mix. The great thing about making cookies from a cake mix is the wide variety of cookies that can be made. The basic change is to add 1 egg, 1/4 cup water, and one stick (1/2 cup) of melted butter. After that, you can get very creative with your add ins. So here are the two types of cookies that I made.

Lemon Blueberry Cookie Ingredients

  • Box of lemon cake mix
  • 1 stick (1/2 cup) of melted butter
  • 1/4 cup of water
  • 1 egg
  • 1 cup of fresh blueberries

Lemon Glaze

Making a delicious lemon glaze is a very easy and tasty addition to this cookie. Simply mix two tablespoons of lemon juice with 3/4 cup of confectioner's sugar until the sugar and juice have completely combined. Then spread over the top of the cooled cookies.

Directions for Making Lemon Blueberry Cookies

  1. Preheat oven to 350 degrees F.
  2. Pour the cake mix into a bowl and completely mix in the egg, butter, and water.
  3. Gently fold in the blueberries. If the blueberries get squished, it will result in purplish streaks in your cookies.
  4. Place tablespoon sized spoonfuls of cookie mix onto a cookie sheet coated with nonstick spray.
  5. Bake for about 8 minutes. Be sure you do not over bake the cookies. This will result in dry cookies.
  6. Allow cookies to completely cool before adding the lemon glaze.

Makes approximately 30 cookies.

The lemony fresh flavor of this cookie was a big hit and the party!

Chocolate Cherry Walnut Cookie Ingredients

  • Box of devil's food chocolate cake mix
  • 1 egg
  • 1 stick (1/2 cup) of melted butter
  • 1/2 cup of water (I used 1/4 cup and found that I would have preferred for them to be a little more moist. I will change this to 1/2 cup of water the next time I make this recipe.)
  • 3/4 cup of chopped walnuts
  • 3/4 cup of dried cherries

Cake Mix Cookie Ideas

Flavor of Cake Mix
Add Ins
Chocolate Fudge
Reeses Peanut Butter Cup pieces, York Pepperment Patty pieces
Red Velvet
Make as cookie bars and swirl in sweetened Marscapone or cream cheese.
Lemon
raspberries
Vanilla
M and M candies (any flavor)
Butter Pecan
coconut
Spice
shredded zuccini, chopped walnuts

Directions for Making Chocolate Cherry Walnut Cookies

  1. Preheat oven to 350 degrees F.
  2. Add cake mix, egg, butter, and water to a bowl and mix thoroughly.
  3. Stir in the walnuts and cherries.
  4. Place spoonfuls of cookie mix onto a nonstick spray coated cookie sheet.
  5. Bake in the oven for about 8 minutes watching carefully not to over bake.

Makes about 3 dozen cookies.
