Easy Quinoa Recipe: Quinoa with Egg, Cilantro and Asian Sesame Dressing
What Is Quinoa?
I was introduced to quinoa (pronounced KEEN-WAH) a few years ago. Quinoa is an amino acid-rich protein seed that has a fluffy, creamy, slightly crunchy texture and a somewhat nutty flavor when cooked. I took a sabbatical from quinoa, also known as the gold of the Incas, because I was running out of ways to prepare it.
I decided to give quinoa another try. This time I added another protein rich food, hard boiled eggs. For flavor I included 2 of my favorite ingredients, cilantro from our garden and Kraft Light Asian Sesame Dressing. It resulted in a filling meal, full of various flavors and rich in protein.

For a quicker prep time, hard boiled eggs and quinoa can be made in advance.
Ingredients For Quinoa with Egg, Cilantro and Asian Sesame Dressing
- 1/4 cup quinoa, uncooked
- 1 egg, hardboiled and cut
- 1 tbsp cilantro, finely cut
- 1 tbsp Kraft Light Asian Sesame Dressing

- Wash quinoa in cold water. Add 1/4 cup quinoa to 3/4 cup boiling water. Substitute vegetable broth for more flavor. Cover. Reduce heat, and simmer for 12 minutes. Let stand for 5 minutes and fluff.
- Cut 1 hard boiled egg as desired.
- Finely chop 1 tbsp. cilantro. I add extra as I love the taste of cilantro.
- Add quinoa, egg and cilantro in a bowl. Toss with 1 tbsp. Kraft Light Asian Sesame Dressing.
