This takes about 45 minutes to make with 20 minutes preparation time and 25 minutes to cook. But it's totally worth it. It's sweet and colorful. Definitely a way to get the kids to eat their fruit.
2 cups raspberries, fresh or frozen. I like fresh anything from the farmer's market. But, frozen works in the off seasons.
3 pounds tart apples, peeled, cored, and chopped. Again, I like getting them from the farmer's market or even better a pick your own farm. Love those.
2 cups water
3/4 cup sugar
1/4 teaspoon cinnamon
Put everything in a large soup pot over moderately high heat. Bring it to a simmer; stir, cover, and cook for 20 minutes, stirring every now and then. Remove from heat and let the applesauce cool. Puree the applesauce in a blender or food processor in small batches. Serve hot or cold. (Makes 8 servings)
This is awesome as a side for pork chops, or chicken. It's also good as an afterschool snack.
