Delicious Raw Vegan Soup
If you are a raw vegan and you like the sweet, comforting taste of butternut squash. Then you will love this soup. It is delicious, nutritious and very filling, you might find, when you are eating raw they do not get as satisfied as you did before. Especially if you have just started out eating raw good. Do not worry though, because there are plenty of dishes that you can prepare that will give you that satisfied feeling, minus the calories and processed ingredients.
Here is what you need:
1 cup cucumber, chopped
2 cups butternut squash, peeled and chopped
½ cup red bell pepper, chopped
1 cup pine nuts
¼ cup leeks diced
2 teaspoons fresh, minced or grated ginger
1 ½ teaspoons curry or cumin powder
¼ teaspoon sea salt
¼ teaspoon cayenne pepper powder
Water for blending
Instructions
1. In a food processor blend the cucumber until it is liquified, you can now go ahead an add the squash.
2. Add the remaining ingredients bit by bit and blend everything together until it is smooth. You can add small amounts of water gradually, if you find that it is getting too thick.
3. Pour the soup into a bowl and let it sit there for about 10 minutes before eating.
