Raw Vegan Plum Cake Recipe

Making a sweet vegan dessert can be challenging.. but don’t worry, we can help! Here is a recipe for a quick and easy raw vegan plum cake. It’s a cake everyone will love, no matter if they are vegan or not.

Raw Vegan Plum Cake

Ingredients:

For the crust:

8 - 10 dried plums, stones removed

1 cup shredded coconut

3-4 TBS water

1 TBS sesame tahini

For the icing:

6 TBS coconut oil

6 TBS honey

6 TBS powdered cocoa

Method:

For the crust:

1. Soak the plums in water overnight. (or just blend the plums together with 3-4 TBS water in a

blender until smooth)

2. Add the sesame tahini and the shredded coconut and mix.

For the icing:

1. Melt the coconut oil at low temperature

2. Add the honey and the coconut powder and mix until smooth. If you like sweeter desserts,

you can add more honey.

For the preparation of the cake it’s best if you use a silicone baking mold. Spread the crust on the

bottom of the baking mold. Spread the icing on the crust with a palette knife. You can decorate the

cake with chia seeds, hemp seed or shredded coconut. Chill for about 1 hour in a fridge.

Tip: You can use cocoa oil instead of coconut oil.
