Delicious Raw Vegan Spinach Pie Recipe
If you are on a raw vegan diet you might find yourself craving comfort foods. Well, you will be surprised to learn that you do not have to miss out on eating foods such as rich pies, pasta and filling rice dishes. There are raw vegan alternatives to most foods therefore, you can enjoy the taste and comfort minus the guilt. This delicious raw vegan spinach pie recipe will have you drooling. It is healthy, tasty and it will curb your cravings for processed foods.
2 cups chopped spinach
1 teaspoon salt
1 cup almonds, soaked
¼ cup flaxseed, ground
1 tablespoon raw clear honey
2 tablespoons liquid coconut oil
½ cup pine nuts
¼ cup white onion
1 clove garlic, minced
½ teaspoon nutmeg
2 tablespoons lemon juice
2 tablespoons nama shoyu or tamari
Step 1: Remove the stems from the spinach and roll up the spinach leaves and chop them into small pieces.
Step 2: Season the spinach with sea salt, rub and squeeze the spinach, massaging it with the salt. The spinach will begin to wilt.
Step 3: Make the crust by putting the almonds in a food processor. Process the almonds until they are ground into small pieces.
Step 4: Add the flaxseed, honey, and liquid coconut oil to the almonds and process again. The mixture should resemble fine breadcrumbs, but it should come together to form a crust. You can put the crust in the dehydrator for 12 hours to make it crispy. If you do not have a dehydrator you can put it in the oven for about half an hour on 110 degrees Fahrenheit.
Step 5: Put a thin layer of the crust on the bottom of a pie dish.
Step 6: Put the spinach in a food processor with the pine nuts, onion, garlic, nutmeg, lemon juice and nama shoyu. Pulse the mixture, be careful not to over process.
Step 7: Put the spinach mixture into the pan on top of the crust. Top the spinach mixture with another layer of the pie crust.
You can now enjoy your delicious raw vegan spinach pie.
Tip: You can use this same pie crust to make apple pie as well as any other vegan pie recipe. It is also good for people who are on a low carbohydrate diet.
