Raw Vegan Shepherds Pie
Delicious Raw Vegan Dish
If you love shepherd’s pie, but you have embarked on a raw vegan diet. Then you might miss the comfort of warm mashed, buttery mashed potatoes. It is possible to make your very own raw vegan shepherd’s pie without adding the meat and the potatoes.
Here is what you need
Black sesame seed gravy
Ingredients:
½ cup black sesame seeds
2 tablespoons nama shoyu or tamari
1 cup chopped Portobello mushrooms
1 clove garlic
1 tablespoon lemon juice
¼ teaspoon sea salt
Water for blending
Make the sesame seed gravy first and then make the rest.
Method
1. Grind the sesame seeds into a powder using a coffee grinder or a spice mill
2. Blend all the ingredients together in a high powered blender until smooth. If you need to add water to reach the desired texture. It should resemble thick, brown regular gravy.
To Make the Potatoes
Here is what you need:
1 cup macadamia nuts
2 cups chopped cauliflower
¼ cup olive oil
1 clove garlic
1 teaspoon salt
¼ teaspoon cayenne pepper powder
1 teaspoon rosemary
2 teaspoons nutritional yeast
Method
To make the potatoes you need to do the following:
1. Put the macadamia nuts with the olive oil into a food processor and process until it comes together.
2. Add the cauliflower and the rest of the ingredients, and process until it begins to resemble mashed potatoes.
3. Set aside.
The filling
To make the pie filling, here is what you need:
1 cup Portobello mushrooms
¼ cup olive oil
¼ cup nama shoyu
1 cup asparagus tips
½ cup carrots chopped
½ cup black sesame seed gravy
1 tablespoon lemon juice
½ chopped onion
1 teaspoon sweet paprika
Method:
1. Marinate the mushrooms in a mixture of nama shoyu and olive oil. Leave to sit while you prepare the other vegetables.
2. Combine the other vegetables with the mushroom mixture, and add the sesame seed gravy and mix together.
Assembly
Put all the vegetables in a casserole dish, and spread evenly. Now, using a spoon a pallet knife spread the mashed potato mixture on top of the vegetables, so that it resembles shepherd’s pie. You can now either eat it like that, or you can put it in the dehydrator for 3 hours on temperature of 145 degrees Fahrenheit. If you do not have a dehydrator, you can put it in your fan oven at a temperature of 110 degrees Fahrenheit. Make sure you leave the oven door open and leave it in there for about an hour or two.
You can serve this dish with a mixed green leaf salad. Enjoy!
