This gooey treat is my absolute favourite dessert. I was introduced to this when I was in my early 20's, but turned into the biggest kid by a mere sniff of its tangy scent. I hope that once you taste this dreamy combination of pineapple and coconut, it will become your favourite, too.

Before You Start

Difficulty Rating: Easy!


  • Pre-heat oven to 375 F (190 C)
  • Total bake time 45 minutes (15 for crust + 30 for completed tray)
  • You will need a 9 inch square pan (ungreased)


Ingredients

Crust

½ cup butter or margarine
½ cup brown sugar, lightly packed
½ tsp. vanilla
1 ½ cups flour


Center

1 sm can crushed pineapple, well drained (approximately 1 ¾ cups)


Topping

¼ cup melted butter
¾ cup sugar
1 egg
1 tsp. vanilla
1 cup shredded coconut

Instructions


Crust


  • Cream the butter or margarine
  • Blend in brown sugar
  • Add vanilla
  • Mix in flour
  • Press into bottom of pan


Note: This dessert is supposed to be made in a square pan, however I discovered after I was already part-way through this process that I don't actually have a square one *blush*


  • Place in oven
  • Bake for 30 minutes
  • Remove from oven and cool
  • Spread with pineapple

Topping


  • Beat melted butter with sugar, egg, vanilla and shredded coconut.
  • Spread over pineapple


  • Return to oven
  • Bake for 15 minutes


  • Remove from oven and cool
  • Cut into squares and enjoy!

      It *is* amazing. We just finished nibbling a few pieces ~heaven~ lol It's very easy to make ... hm ... maybe I should mention that in the hub itself ...
