Waw! What a simple yet fresh, delicious, healthy and gorgeous looking dish. I love the way Chinese condiment their raw vegetables, yummy. If it is good for the stomach, I will certainly try this coral cucumber. Thanks for sharing your authentic Chinese recipes :D

Thanks, Virginia, so much. I am now living in Canada, so the cucumber I used is Canadian product. I think they are close, no big difference. About how to prepare the cucumber, I'll try to put more pictures. When I first learn it, I put a chopstick below to avoid to break in the middle (a real chef suggested that on TV. He also said that whether the sliced pieces is thin or heavy doesn't matter, but every piece is supposed to be in the same thickness).

I've had this before at a restaurant but had no idea how to make it. Great recipe. I will have to try it. We don't always have Chinese cucumbers but I will try to find some here. Could you add a couple of pictures to show the cutting more? I'm not completely sure I understand how to do that.

Thanks, Hyphen, for the lovely comment. It is tasty and refreshing. Actually, I can make it in 2 minutes, but the preparing time means for other ingredients, such as cutting the ginger and pepper. I usually prepare the cucumber during the time when waiting for the sauce done. I need to change the cooking time capsule to make it clear. Thanks again.

This is a beautiful and unusual dish. It would be great on a hot day or for a luncheon. You must be really fast with a knife to prepare it in only 2 minutes. I will need at least 10 minutes to cut that cucumber. I will definitely make this. I love cucumbers. Thanks for the recipe.
