Recipe for making Palak Paneer

  • 2 large bunches Spinach
  • 200 grams Cottage cheese (paneer)
  • 2-3 Green chillies
  • 8-10 cloves Garlic
  • 3 tablespoons Oil
  • 1/2 teaspoon Cumin seeds
  • to taste Salt
  • 1 tablespoon Lemon juice
  • 4 tablespoons Fresh cream
  1. Remove stems, wash spinach thoroughly in running water.
  2. Blanch in salted boiling water for two minutes.
  3. Refresh in chilled water. Squeeze out excess water.
  4. Remove stems, wash and roughly chop green chillies. Grind spinach into a fine paste along with green chillies.
  5. Dice paneer into one inch by one inch by half inch pieces. Peel, wash and chop garlic
  6. Heat oil in a pan. Add cumin seeds. When they begin to change colour, add chopped garlic and sauté for half a minute.
  7. Add the spinach puree and stir. Check seasoning. Add water if required.
  8. When the gravy comes to a boil, add the paneer and mix well. Stir in lemon juice. Finally add fresh cream. Serve hot.

      Agreed this is not explained well. The cheese is made by cooking whole milk with lemon juice until it curdles, then straining the curds and pressing them. In mexico I think there is a similar soft cheese called queso blanco? But what we think of as cottage cheese will not work.

      This recipe is a bit confusing to me because I have only seen cottage cheese in its classic pellets presentation and there is no way to dice it. Maybe it is a compressed form of cottage cheese I am not aware of? Anyway, palak paneer looks delicious.
