Recipe: Jamaican Beans

Simple but Elegant!

An acquaintance rattled off this recipe one day in a lovely conversation we were having about good food. He only gave me the basic ingredients of black beans, chilies, and coconut milk. Since then, I tried it several times and love it! I have adapted it a little to perfect the ratio of ingredients.


1 lb. dried black beans, soaked overnight

3 cans coconut milk

1 T Thyme

1 T garlic cloves, minced

6 fresh Serrano chilies, minced

2 T bacon fat

Melt bacon fat into medium pot. Add seasonings and sauté for a few minutes. Add beans and coconut milk. Cook beans until very tender. You may need additional fluid; you can use water or more coconut milk. Mash and serve.

Substitutions & Variations

  • You can substitutes canned black beans, 3-4 cans. Be sure to rinse the beans well before cooking.
  • You can mix or use different hot chilies
  • You can use more or less chilies based on preference.

      Thanks for this! I've been looking for more bean recipes. I need protein, but trying to switch from so much meat.
