  • 1 can (10 3/4 ounces) condensed cream of mushroom soup
  • 4 cups cooked green beans
  • 1/8 teaspoon pepper
  • 1/2 cup milk
  • 1 1/3 cups French fried onions


Mix soup, milk and pepper in a 1 1/2-quart casserole dish. Stir in beans and 2/3 cup of the fried onions. Bake for about 25 minutes at 350 degrees F. Top with the remaining 2/3 cup fried onions and bake about 5 more minutes, until onions are lightly browned.

Serves 6.

Green Bean Casserole With Corn


  • 1 can French-style green beans, drained
  • 1 cup celery, chopped
  • 1/2 cup sour cream
  • 1 can cream of celery soup
  • 1 can shoe peg corn, drained
  • 1 cup green pepper, chopped
  • 1/2 cup cheddar cheese, grated
  • Topping:
  • 3/4 cup crushed Ritz or butter crackers
  • 3 tablespoons melted butter


Combine first 7 ingredients and put in a greased casserole dish. Combine topping ingredients and sprinkle evenly over vegetable mixture. Bake at 350° for 45 minutes.

Serves 8.

Green Bean Casserole With Tomatoes and Mozzarella Cheese

This delicious green bean casserole is a nice combination of flavors. Top this casserole with buttered bread crumbs or crumbled French fried onion rings.


  • 1 large bag (22 to 24 ounces) whole green beans
  • 2 plum tomatoes, diced
  • 8 ounces shredded Mozzarella, fresh if possible
  • 2 tablespoons butter
  • 1/4 cup finely diced onion
  • 3 tablespoons flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup buttered bread crumbs or slightly crumbled French fried onions


Butter an 11x7-inch baking dish. Heat oven to 375°.

Cook the green beans in a small amount of water until just tender. Drain and arrange in the prepared baking dish. Sprinkle with the diced tomatoes and shredded cheese.

Set aside.

In a saucepan over medium-low heat, melt butter. Add onion and sauté until tender. Stir in flour until well blended. Add the salt, pepper, cream, and sour cream. Heat through, stirring constantly. Spread the cream mixture over the green beans then sprinkle the bread crumbs or French fried onions over all. Bake for 25 to 30 minutes, until browned and bubbly.

Serves 6.

Green Bean Casserole

This green bean casserole is made with a homemade seasoned white sauce and soft buttered bread crumb topping.


  • 16 ounces frozen French-style green beans, cooked and drained
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 3 tablespoons minced onion
  • 3 tablespoons minced pimiento or roasted red pepper
  • 1 1/4 to 1 1/2 cups half-and-half
  • salt and pepper, to taste
  • 1 1/2 cups soft bread crumbs
  • 2 tablespoons melted butter
  • herb seasoning blend, optional


In a medium saucepan, heat butter; add onion and pimiento or red pepper and cook over medium-low heat until onion is tender. Add flour and stir until well blended. Gradually add the 1 1/4 cups half-and-half or whole milk.

Taste and add salt and pepper to taste. Thin with a little of the green bean cooking liquid or a little more half-and-half or milk, if necessary. Combine with the drained cooked green beans. Spray a 1 1/2 to 2-quart casserole with cooking spray. Spoon green bean mixture into the baking dish. In a bowl, toss bread crumbs with melted butter and herb seasoning blend, if using; sprinkle evenly over green bean mixture. Bake at 350° for 25 minutes, until bubbly. Broil for a few minutes to brown bread crumbs more, if desired.

Serves 4 to 6.

Green Bean Bake With Cheese

This flavorful green bean bake contains frozen cooked French-style green beans, diced bacon, onion, Cheddar cheese, and a thickened sauce.


  • 2 packages (9 to 10 ounces each) frozen French-style green beans, cooked and drained
  • 6 slices bacon, diced
  • 1/2 cup chopped onion
  • 1/4 cup flour
  • 1 1/2 cups water
  • 2 teaspoons chicken bouillon granules
  • 1/8 teaspoon ground black pepper
  • 1/2 cup shredded Cheddar cheese


Heat oven to 350°. Place cooked green beans in a 1 1/2-quart baking dish.In a medium saucepan over medium heat, cook bacon and onion until bacon is browned and onion is tender, stirring occasionally.

Stir in flour until well blended. Gradually stir in the water, chicken bouillon granules, and pepper. Continue to cook, stirring constantly, until sauce is quite thick.

Add sauce to beans and gently stir to blend. Sprinkle with cheese.

Bake for 30 minutes, or until casserole is hot and bubbly.

Serves 6 to 8.

Green Beans Supreme


  • 1 pound fresh green beans, cut French-style or 1 pound French-style frozen green beans
  • 1 small onion, halved and thinly sliced
  • 1 tablespoon chopped fresh parsley (or use 1 teaspoon dried)
  • 3 tablespoons butter, divided
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon finely shredded lemon peel
  • 1/2 teaspoon salt
  • dash of pepper
  • 1/2 cup milk
  • 1 cup reduced fat sour cream
  • 1/2 cup shredded mild Cheddar or American cheese
  • 1/4 cup fine dry bread crumbs


Cook fresh cut beans until just crisp-tender, or cook frozen beans according to package directions; drain. Cook onion and parsley in 2 tablespoons of butter until onion is tender. Blend in flour, lemon peel, salt, and pepper.

Add milk; cook until thickened and bubbly, stirring constantly. Stir hot mixture into sour cream and cooked beans; heat until sauce begins to bubble. Spoon into a 1- to 1 1/2-quart casserole; sprinkle cheese over the top. Melt remaining 1 tablespoon butter; toss with bread crumbs and sprinkle over cheese. Broil about five inches from broiler until cheese melts and crumbs brown, about 1 to 2 minutes.

Serves 8 as a side dish.
