Swedish Pancakes

These are good for breakfast, brunch, snacks, or supper.

Cook Time

Prep time: 10 min
Cook time: 30 min
Ready in: 40 min
Yields: Easily serves three kids and two adults.


  • 1 1/2 Cups Flour
  • 6 Eggs
  • 2 Pinches Salt
  • 2 Teaspoons Sugar, (optional)
  • 4 Cups Milk
  • 1 Tablespoon Cooking Oil, (optional)
  • 1/4 Cups Wheat Germ, (optional)


  1. Crack eggs into large bowl. Using hand mixer, add flour until thick batter forms.
  2. Add other dry ingredients.
  3. Slowly add milk, then oil, if desired.
  4. If using a pan, spoon the batter (a ladle works great) and then swirl so the batter spreads out. Flip when it is no longer shiny.
  5. If using a griddle, use a ladle to make batter outline of a pancake shape, then fill it in. Flip when pancake is no long shiny.
  6. Serve rolled up with syrup, strawberries or powdered sugar. For a savory flavor, fill with ham and Swiss cheese.

      Thank you Kimberly! Yes, they are a bit sweeter than crepes. Traditionally they are served with Lingonberries but my family isn't crazy about that tart flavor, so we keep it simple. They are a little putzy as you must be near the stove to flip them, but especially if you make up the batter the night before, it isn't too bad.

      i love pancakes. Usually make them for breakfast. Spread some kaya or peanut butter over them. Awesome when you have them with hot beverages. Voted up
