Bear N Mom Recipes - Zucchini Appetizers
During this fresh vegetable season, you can count on having more zucchini than you know what to do with. There are so many ways to use zucchini. One is as an appetizer by breading and frying. BUT--here is a healthy baked appetizer that will yield about 4 dozen appetizers for your tray.
- 3 cups finely sliced unpared zucchini
- 1 cup Bisquick baking mix
- 1/2 cup onion, finely chopped
- 1/2 cup grated Parmesan cheese
- 2 tablespoons parsley
- 1 teaspoon salt
- 1/2 teaspoon oregano
- Dash of pepper
- 1 clove garlic, finely chopped
- 1/2 cup vegetable oil
- 4 eggs, slightly beaten
How To Mix and Bake
- Grease 13 x 9 x 2 inch pan.
- Mix all ingredients and spread in pan.
- Bake at 350° until golden brown, about 30 minutes.
- Cut into pieces about 2 x 1 inch.

This is such an easy recipe you will want to use it for picnics and family summer parties.
I belong to a fraternal organization and attend Spring and Fall conventions. This is something that I can bring that can be taken from the refrigerator in the morning of your drive to the convention and used in the hospitality room that day. If the hospitality room has refrigeration, you can make two pans to take with you.
In today's world, you no longer have to wait for the growing season to make this wonderful appetizer. Most supermarkets carry zuchini in their produce sections and you can make this year round. It is a dish that can be used for a Lenten Friday and it makes a nice addition to any holiday table when friends and family gather.
