Bear N Mom Recipes - Oatmeal Date or Fig Bars
This was a favorite in my family for generations. My grandmother and mother always had dates for baking. This simple recipe is easy to make and the bars can be stored in tupperware with the layers separated by wax paper. Keep the cookies in a cool dry place.
2-1/2 cups chopped dates or figs
1 cup water
1/4 cup sugar
1/2 cup chopped walnuts
1-1/2 cups flour
1-1/2 cups quick oats
3/4 cups brown sugar
1/2 cup softened oleo (margarine)
How To Mix and Bake
Snip dates (figs) into pieces with kitchen scissors.
bring water, dates and sugar to a boil in a saucepan. Reduce heat and cook simmer about 8 minutes stirring often. Take off heat and stir in walnuts. Cool.
Preheat oven 350°.
Cut margarine into flour and oats until crumbly. Add 1 tablespoon water and mix
Spread 1/2 oatmeal mixture in greased 13" sheet cake pan. Pat down.
Cover with Date mixture.
Spread rest of oatmeal mixture and pat lightly.
Bake 35-40 min
Cool in pan, cut into bars and lift out with cake icer. Lay out on brown paper until cookie is totally cooled and then put in container for storage.

This cookie is one that I've always loved. Add it to your Christmas list and be sure to make it along with those nut horns. You can make another style of date cookies by cutting layers of butter cookie dough and spreading the filling on these. Dates are always fresh when you eat them because they retain their moisture.
