Macaroni and Cheese Casserole with Chicken or Broccoli Variations
This is the old fashioned recipe that my mother used to make for us. She baked it in the oven in a casserol dish that was later set into a chafing dish on the dinner table.
1 lb macaroni
1 stick margarine
1 lb. Colby cheese
boil macaroni until almost tender
drain and place into a casserole ¾ full
cut your margarine into bits and mix into macaroni
cut your cheese into small chunks and stir into macaroni mixture
use enough milk to cover macaroni
Bake in a 350 deg. Oven until cheese is melted (approximately 30 minutes)
Sprinkle casserole with crushed potato chips
Chicken and Broccoli Variation
I recently saw a recipe for this addition to the traditional macaroni and cheese recipe. I thought it was interesting and I'm trying it tonight for dinner.
Prebake 2 chicken breasts. Cut into chunks and set aside. Precook broccoli florets or chopped broccoli and set aside.
Prepare the above macaroni recipe and cook until almost done. Stir in the chicken and broccoli and return to the oven for an additional 15 minutes to heat through.
Quick Version For Today's Busy World
Buy an already prepared tray of macaroni and cheese and prepare as directed. Follow directions for the Chicken and Broccoli version and add to prepared frozen dinner after cooking.
