Best Dessert and Cake Recipes for June

June's fabulous round-up of all utterly divine delicious desserts, with the few odd cookies, grown-up slushies and wonderful rum cake thrown in for you to make the beginning of your Summer into a happy, happy time for you and your loved ones.

SALTED CARAMEL CHEESECAKE

I love cheesecake at the best (and worst) of times, it always makes me feel good, in the past I have always opted for a fruit topping on my cheesecake, that was until I encountered Salted Caramel Cheesecakes - the fact that these are little individual cupcakes and sooo cute that I end up eating more cheesecake that I probably would, or should, but there is something about the combination of biting into that Salted Caramel topping and down into the creamy cheesecake layer that really does it for me. And if you intend to eat more than one of these (who wouldn't?" then here's a little food tasting experiment for you, try eating the second one upside down so that the salted caramel hits your tongue first - I know it sounds mad but mad as it sounds, for me it tasted even better - go on try it and please let me know what you think.


PINK CHOCOLATE CHIP COOKIES FOR BREAST CANCER AWARENESS

I thought I'd start of this month's hub with something that is more than a dessert, these oh so cute Pink Chocolate Chip Shortbread Cookies are here to celebrate the fight against Breast Cancer - the website suggests that we Make 'Em, Bake 'Em and Share 'Em! and I couldn't agree more and I think they would sell like 'hot cakes' (or cookies) at the school bake sales, perhaps a little suggestion to make them even more cute, how about trying your hand at cutting them in the shape of the Breast Cancer Awareness insignia?


CINNAMON SUGAR COATED 'BAKED' DOUGHNUTS

Sometimes there is a need for something truly comforting and finger licking good, not for me the doughnuts filled with creams and jams, I like my doughnuts with holes (I want the holes too) but doughnuts must be rings of delight rolled in cinnamon sugar.

On a seaside weekend break my daughter and I actually stopped in amazement when we saw a woman eating a doughnut with a fork - WHY? Hasn't anyone taught her the pure joy of licking cinnamon sugar off your fingers while eating a warm fluffy sugary cinnamon doughnut? Have I gone a bit far? Not a bit and I'm sure that there's plenty of wonderful doughnut scoffing happy finger-licking people out there that agree with me.

And why are these doughnuts extra-special? They are not fried - yep it's true - so not only are they scrumptious they are much healthier. You can either shape these by hand which gives you rather quirky doughnuts or you can buy doughnut pans (I didn't even know these existed) - either way they are a wonderful treat - and remember licking fingers good, forks bad!


CHERRY MINT JULEP SLUSHIES

Now I know there are some of you looking at this slushy thinking 'yes it looks fabulous BUT it's a not a dessert' well you have to trust me on this one, there are days and I'm talking those very hot muggy days where there's no air and nothing is helping with the heat, you've hard a light dinner because you really can't face heavy food on a day like today and when you think of dessert - then think of this little iced glass full of Cherry, Mint and Ice, glorious crushed ice that melts on your tongue and glides down the back of your throat, iced glasses that cool your fingers and that you can hold against your face and neck and finally find relief from the heat - now that's a dessert that tastes fabulous and does so much more.


NUTELLA FUDGESICLES

Well I included the alcoholic slushie above for the adults who fancy something cold to cool them down in the hot Summer months when they don't fancy a dessert or indeed want something as well as dessert so I thought I would add something for the kiddies or for those who are young at heart, these delicious Nutella Fudgesicles and just pure heaven, that wonderful taste and ice cold is just the thing for a hot Summer day in June.


MEXICAN CHOCOLATE TART WITH PECANS

Doesn't this look fabulous - deep heavenly chocolate tart and my favourite of all the nuts Pecans (with a capital P). Yes it's another fabulous dessert by those clever people, Lindsay and Taylor over at the Love and Olive Oil website (definitely one of my favourite websites) and their sweet and spicy combination of chocolate and chili is in my books perfection - I made this for a cosy dinner party last weekend and it was a massive hit - it's rich and it's for sharing with those you love - no honestly you have to share it - you must not sit and eat it all by yourself - but you are allowed to hide an extra slice to indulge in when everybody goes home.


WHITE CHOCOLATE PEPPERMINT BARK CHEESECAKE

This would definitely be on my daughter's list of must have desserts, she absolutely adores mint in all it's guises and to pop it into and onto a cheesecake well it's almost more than she can hope for. This peppermint cheesecake is swirled with peppermint bark pieces and then beautifully topped off with a layer of white chocolate mousse, bits of chocolate and crushed peppermint candies - it's a Peppermint Extravaganza!


BANANA AND BLUEBERRY FRENCH TOAST

I love savoury French Toast for breakfast, I don't have it too often, and it always brings back memories of my childhood - now I'm all grown up I've discovered there is a sweet version of this breakfast and this version created by Jamie Oliver (we love you Jamie) is my absolute favourite, I have to say there are lots of recipes that Jamie does that are my favourites so I'm not surprised that he came up with this sweet French Toast and added the winning combo of the two wonderful superfruits banana and blueberry, naturally this just had to be finished off with a sprinkling of icing sugar, I can't think of anything more scrumptious and I may just go off and make some this evening. Jamie we are forever in your debt.


CHOCOLATE CUPCAKES WITH PEANUT BUTTER BUTTERCREAM

These are my sort of cupcakes, not only do they look outstanding and friends just can't wait to get their hands on these darling cakes, what makes them even better is that they are so easy to make - your friends will think you've worked like a slave to give them something sensational. I've eaten a lot of cupcakes, actually I'll change that, I've tried a lot of cupcakes and quite frankly most of them are all looks with very little in the way of taste - these are the exception, peanut butter and deep decadent chocolate - try them I'm sure you'll agree.


Hard Magic Shell Chocolate Sauce

I remember this from when I was a child and recently bought some after my daughter begged for it, loudly, in a supermarket, the shame!


Anyway I bought a bottle of it, it worked, it was okay, the magic of it changing from a liquid to a hard magic chocolate shell was still there, but the bottled stuff is nothing compared to the taste of this wonderful homemade version. Go on try it, it is very, very easy to make, the recipe is super quick, it takes 2 ingredients to make it, yes I said 2, the shop bought one is full of preservatives and other things that really should only be in a laboratory and not on your ice-cream - the kids will love it and they'll think that you're magic as well as the magic chocolate shell.


3 MILK COCONUT CAKE

This innocent looking little beauty has hidden treasures, it is soft, light and has a glaze of coconut milk, condensed milk and coconut rum - bliss on your palate - the other milk if you're wondering is whole milk (just think of all that calcium to give you strong healthy bones, hair and teeth) yes I am definitely thinking up reasons why I can eat this more often that I should but once you've tasted it you'll be doing the same.



APPLE AND CINNAMON CRUMBLE

Isn't Apple Crumble everyone's fall back dessert? There is something so comforting about a bowl of hot steaming slightly sweet, slightly tart apples and that warm cinnamon smell and taste that is just so satisfying. This version takes the 'humble crumble' to a whole new level with the addition of walnuts and raisins and using brown sugar to give a stronger taste to the crumble sitting crisply on top protecting all those glistening juicy fruits beneath it's surface. Served with a large dollop of clotted cream, or double cream or as in the photograph some rich vanilla ice-cream drizzle with some caramel sauce - it's heaven on a plate!
