Rice for Breakfast ? (Pancakes)

Also rice pudding recipe (quick)

I use all organic ingredients:

I had some left over brown basmatic rice so I used

1 can of evaporated milk (lowfat) and not organic

2 eggs

1/2 cup sugar

1 tsp. vanilla

1 tsp. cinnamon

1/2 cup raisins

dash of kosher salt

And probably 3 cups of the rice

Mix the wet ingredients together...add the dry and then pour the mixture over the rice and stir. And add the raisins.

Using spray oil I sprayed the sides and bottom of a casserole dish and poured in the rice mixture.

Baked at 350 for one hour on a cookie sheet

You can add more sugar for a sweeter pudding...and I serve with whipped cream or half and half on top.

Now for Rice Pancakes Very simple and good

Using left over basmati rice ( no other has the same good flavor for this pancake)

Use about a 1/3 of a cup to 3/4 a cup of the rice

Beat a egg and add to the rice

Pour into a hot pan that has melted butter in it and cook...turning once and serve.

I use butter on top with warm Real Maple syrup....You can serve with bacon, ham whatever you prefer.
