Roasted Plantain on a Tofu Scramble Bed: Delicious Vegan Dish
Delicious Vegan Dish
Plantain is healthy, sweet and is a great accompaniment to leafy greens. You can fry it, boil it or roast it. In this recipe the plantain is lightly grilled in a grill pan with a touch of olive oil. This is a quick dish you can prepare for both lunch or dinner. You can actually have the tofu scramble for breakfast.

Prep time: 15 Minutes
Ingredients
2 medium ripe plantain
1 bunch of fresh chopped chives
1 clove garlic minced
1 bunch of fresh spinach leaves
½ cup shredded cabbage
½ red bell pepper
Pinch red pepper flakes
Pinch seasame seeds
10 green beans chopped
Mild madras curry powder
Pinch of sea salt
Pinch of ground black pepper
¼ cup cubed firm tofu
Splash of olive oil
Tofu Scramble
To make the tofu scramble, heat the olive oil in a frying pan and toss the chives and garlic into the pan. Lightly stir fry and then throw in the rest of the vegetables and stir fry. Add the seasame seeds, the curry powder, just a pinch and the red pepper flakes. Add a pinch of sea salt and a pinch of ground black pepper. Add a splash of water and keep stirring until everything looks done.
Plantain
Peel the plantain and sprinkle a little black pepper on it. Cut them half and roast them in a grill pan with a splash of olive until golden and fully cooked.
Place the tofu scramble on to a plate and lay the roasted plantain on top of the scramble. Enjoy !
