Roasted Red & Sweet Potatoes with Shallots

Sharing some of our families most favorite recipes anyone can prepare with ease!

We love our potatoes in this house and usually have them as a side several times a week. I think the best way to get the most flavor out of a potato is by roasting them. Throw in a few sweet potatoes and a couple shallots or an onion and you have perfection in a pan!

Cook Time

Prep time: 15 min
Cook time: 45 min
Ready in: 1 hour
Yields: Serves 6 people one cup each


  • 4 Red Potatoes, Diced
  • 1 Sweet Potato, Diced
  • 2 Shallots or 1 Small Onion, Diced
  • 2 T Olive Oil
  • 1/2 T Smoked Paprika
  • 1/2 T Old Bay Seasoning
  • 1/2 T Rosemary
  • 1/2 T Garlic Powder
  • 1/2 T Salt & Pepper


  1. Pre-heat over to 425.
  2. Add diced potatoes and onions to a large bowl.
  3. Add olive oil and the rest of seasonings. Stir until well combined. Add more olive oil if desired.
  4. Add potatoes to a large cookie sheet and bake uncovered for 35-45 minutes or until desired crispness. Stir ofter to keep from sticking to pan.
  5. Remove from over and cover with foil. Let sit for 5 min before serving.

      Thanks KS...It can easily be changed around with seasonings of your choice. I make it all different ways but this is our favorite.

      Glad to help Rochelle! Old Bay is wonderful on so many things. We use it for pretty much everything! BIG potato fans over here too, and I agree, always fun to get new ways to cook them! Enjoy!

      This looks good and so does your other potato (stacks) recipe. My husband is a potato-aholic, so I love having some new ideas for spuds. I have Old Bay seasoning but never know what to do with it-- now I know.
