Roasting The Perfect Eggplant
To me there is nothing better than cooking your entire meal in the oven, it's delectable the taste is great plus once you finish your prep the oven will do all the rest. So like roasting a a tasty chicken or a tasty piece of lamb, how about roasting some great tasting vegetables like eggplant ,
Here eggplant is roasted in thick slabs that blacken and caramelize on the outside, sealing the juices inside. Serve as an accompaniment to roast-lamb or chicken.
2 eggplants (trimmed)
extra virgin olive oil
sea salt, black pepper
Preheat oven to 375 degrees, cut the eggplants into slices about 3/4 inch thick. Brush with olive oil and place in a single layer on a baking sheet. Season with salt and pepper, Roast eggplant in the oven for 40 minutes until tender and caramelized. Then serve.
