Rolled Out Chocolate Chip Cookies

I've had this recipe for years. The cookies are a little like old fashioned sugar cookies, but with chocolate chips. I don't think I've ever had a bad batch of cookies from this recipe. Using my smallest cutter, I usually get about 4 1/2 dozen cookies. A great variation on this recipe is chocolate peanut butter cookies, which is just as good as the original. I replace 1/2 c. of flour with 1/2 c. of cocoa and replace the chocolate chips with peanut butter chips. My whole family loves them either way, so they don't last long.

  • 1 c. soft butter
  • 1 c. sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 3 c. flour
  • 2 tsp. baking powder
  • 1 c. chocolate chips
  1. Preheat oven to 375.
  2. Cream butter and sugar. Add vanilla extract and egg. Add flour and baking powder. Stir in chocolate chips.
  3. On lightly floured surface, roll dough to 1/4 inch thickness. Cut into desired shapes. Place on ungreased baking tins.
  4. Bake 10 minutes. Cool on racks.
