Rum and Raisin Cupcakes

Yummy raisin and rum cake, reminiscent of raisin pudding. Use dark rum to give these cupcakes a warm caribbean taste.

Yields: 1 1/2 dozen


  • 1/2 cup Raisins
  • 3 tablespoons Dark Rum
  • 1 cup Butter, softened
  • 1 cup Sugar
  • 2 cups flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 4 Eggs, large
  • 1/2 cup Buttermilk
  • --- For the Syrup ---
  • 5 tablespoons Dark Rum
  • 2 tablespoons Light Brown Sugar


  1. Soak the raisins in the rum (for the cake) for 2 to 3 hours to soften them. Preheat the oven to 350 degrees. Place 18 paper baking cups in muffin pans.
  2. Combine all ingredients in a bowl and beat with an electric mixer. Fold in the raisins then scoop the batter into baking cups. Bake for 20 minutes or until a toothpick inserted in the centre comes out clean.
  3. While the cupcakes are in the oven, combine the syrup ingredients in a pan. over low heat dissolve the sugar in the rum. simmer for 5 minutes, then remove from heat.
  4. Once the cupcakes are done prick 5 holes into each one with a toothpick and pour the syrup over each. Remove the cupcakes and cool on a wire rack.


- For best results, sift the flour and mix it into the batter last. This will help to keep the cupcakes light and fluffy.

- Time the syrup right so that it doesn't cool before the muffins are done.
