!/2 cup old fashioned rolled oats
1 cup all-purpose flour ( I use organic non bleached)
1 cuo whole wheat flour
3/4 teas. ground cinnamon
1/2 treas. baking soda
1/2 teas. salt
1 cup unsalted butter(ROOM TEMP)
3/4 cup light brown sugar(or maple syrup works)
1 large egg
8 oz. bittersweet or semisweet chocolate cut ihto 30 squares
15 large marshmellows Halved.
Preheat oven to 350 F.. Ina food processor,pulse oats until finelyground. Add flours,cinnamon,baking soda, and salt, pulse to combine. in a large bowl,using electric mixer, beat butter and sugar until light and fluffy. Beat in egg, scraping down sides of bowl. With mixer on low, beat in flour mixture just until ciombined.
Drop dough by tblsp., 1 inch apart, onto two baking sheets. To[p each with a chocolate square. Bake just until lightly golden. 11 to 13 minutes, rotating 1/2 way through(sheets)
Remove sheets from oven;heat broiler. top each cookie with a marshmellow .One sheet at a time, broil until marshmellows are lightly browned. 1 to 1 1/2 minutes. Transfer to wire rack to cool...makes abt 30
