Salmon and Tilapia Taco Recipe

Ingredients you will need:

  • 12 unbaked won ton wrappers
  • 2 Tilapia Filets
  • 2 Salmon Filets
  • 1 to 2 Tablespoons of Olive Oil
  • 1 Avacado, halved and pitted and cut into cubes
  • 1 Mango peeled and cut into cubes
  • 1 bag of Arugula greens (chopped)
  • 1 small onion chopped (approximately 1/4 cup)
  • Small bottle of Vegetable Oil
  • One tablespoon of fresh lemon juice
  • Cupcake or Muffin Baking pan

Preheat oven to 375 degrees

Brush bottom and sides of Won Ton cups with Vegetable oil and place into non-stick cupcake or muffin baking pan.  Bake about 6 to 8 mintues.  Be sure to watch them so they do not burn.

Remove from oven.  Let cool.  Remove baked won ton cups from pan.

Heat skillet with small amount of Olive oil.  Cook Tilapia and Salmon in pan on low to medium flame.  Cook thoroughly.  Season with salt, pepper and Paprika to taste.  Remove from pan.

To Make Filling for Salmon and Tilapia Tacos:

Place chopped Arugula in large bowl.  Stir in Avacodo cubes and Mango cubes.  Cut Salmon and Tilapia into small pieces and mix into bowl.  Add 1/4 cup of chopped onion.  Mix with wooden spoon. Cover with one to two tablespoons of olive oil and one tablesppon of fresh lemon juice.  Stir all ingredients together.  Carefully spoon mixture into baked Won Ton Cups.

If desired, place small decorative umbreller topper into center of each filled won ton cup.

Serve and enjoy.  This dish is light and delicious and a wonderful dish for the summer time.
