For this particular soup recipe, I would bring out my nice green Tiara bowls. They are a good thick glass and perfect for this hearty soup. I would love to entertain at my place when my family is coming to visit.

There are some different things that you can do when you are getting ready to put the toppings on the soup. When you get ready to serve the soup, no matter how formal or in-formal your meal is, I always like to suggest different little serving bowls for each condiment that you are serving. This way, each person has the choice of what toppings they want. You could set the toppings up like a buffet style in your own home. Everyone will be eating the same thing just personalized.

You can use such toppings as sour cream, chives, jalapenos, cheddar cheese and tortilla chips. If there are any more toppings that you can think of to use or if you would like to leave something out, that you don't care for, then feel free to do so.

Loving Taco Soup

Taco soup has been popular for several years now. It is a very versatile soup and any ingredients that you may not like, you can leave out. I always love to eat taco soup at a Mexican restaurant. So, since you can't eat this everyday or even every time you would like to eat it, always reach for this recipe and you can prepare it at home. This recipe will show you step-by-step on how to make this super easy soup from the comfort of your own home. This is a soup that you can use as a meal by itself, serve with crackers or fix some sides to go with it.

This is a "one pot meal". This recipe allows you to combine all the ingredients into one large pot and you are able to eat and enjoy the soup in about 30 minutes. It just doesn't get any better or easier than the directions on this recipe. Soup in the pot that doesn't take long to make, is great for those dreary winter nights. Of course, you can eat this in the summertime but, if you are like me, on hot days, you may not want something quite so hot and spicy.

This recipe calls for ground beef to be cooked and drained and put in the soup. if you would rather have a meat that is lower in fat, you could use chicken. In fact, I think this would be great with cooked and shredded chicken substituted for the beef.

I have never thought of this but, it is called "taco", it wouldn't hurt to put out a little bit of lettuce as one of the toppings for the soup. This would make it more like a taco salad. Also, adding cheese and sour cream, really gives and tomatoes this taco soup. You could put jalapeno if you so desire.

Here's a cute idea for a taco salad bowls just like the restaurant. I came across this tip in one of the food magazines that I used to receive in the mail. You just simply loosely roll up some aluminum foil into a ball. Spray your baking sheet and cook at 350 degree oven until the shells their desired cruchiness.

If this was my party, I would serve a large bowl of chips and salsa along with cheese dip making this dinner a truly enjoyable meal.

Using Fresh Ingredients

Fresh parsley, fresh diced, tomatoes are much better, if you can use fresh ingredients. I hope that you will enjoy your recipe and try it for those family or church gathering.

Saute` the garlic powder, parsley and onion in the pan for about 2-3 minutes or until the onion is tender.

Reduce the heat to low after all the ingredients have been combined and simmer uncovered for 30 minutes, stirring occasionally. Top with your favorite condiments and enjoy.

What does it take to make this soup?

  • 1 tablespoon vegetable oil
  • 1/2 cup onion, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon parsley
  • 1 package taco seasoning
  • 1 (28 oz.) can tomatoes, diced, un-drained
  • 1 (15oz.) can pinto beans, drained
  • 1 (8 3/4oz.) can whole kernel corn, drained
  • 1 (4oz.) can green chilies, diced and drained
  • 1 cup beef broth
  • 1/2 teaspoon cornstarch
  • 1 lb. ground beef, cooked and drained
  • 1 cup sour cream, as garnish
  • 1 cup cheddar cheese, as garnish
  • 1 cup tortilla chips, as garnish

What do you have to do to make this soup?

  1. In a large pot heat the oil.
  2. Add the onion and garlic powder with the parsley and sauté for 2-3 minutes, or until the onion is tender.
  3. Now add the taco spices, seasonings, tomatoes, beans, whole kernel corn, chilies and blend it well.
  4. In a small bowl, gradually blend the beef broth into the cornstarch using a wire whisk.
  5. Stir into the stew and stir in the cooked meat.
  6. Bring the mixture to a boil, stirring frequently.
  7. Reduce heat to low and simmer uncovered for 30 minutes, stirring occasionally.

Cheese: A great addition

Cheddar cheese, Mexican blend cheese or your preference can be used as a topping for this taco soup. There are many toppings that can be used but, cheese, I would think, would be a universal topping and most commonly used. Cheese makes every dish better...in my personal opinion.

Soup is a great food for this time of the year. If you didn't want to fix this on the stovetop, you should be able to fix it and leave it in the crockpot on low overnight. This soup provides a multitude of flavors in your mouth. The taco seasoning, corn, tomatoes and chilies combine to make a very good taste. The ground beef gives the soup some substance to it and makes it more filling.


This would be great to serve for a family dinner or if your parents are coming over to eat with you. You could serve this with the crackers of your choice, cornbread or Mexican cornbread.

      Love spice filled recipes, whether it be main meals or soups.

      I'm not a slow cooker fan, probably because I'm at home all day and have plenty of time on my hands. That is when I'm not writing hubs or comments.
