Sarson Ka Saag – the Most Stereotyped Dish of Punjab

Sarson Ka Saag is the unique dish of Punjabi cuisine. It is cooked in all the Punjabi households during winter and even the restaurants serve sarson ka saag & makki di roti as a specialty. A classic Punjabi dish, Sarson Da Saag is made from mustard leaves, spinach and bathua along with cornmeal and spices. Mustard leaves are slightly bitter in taste, spinach is added to it and the saag is served with a dollop of desi ghee or butter for a rich taste. Bathua and mustard leaves are available in the winter season in India, hence this is largely cooked in Indian homes, especially in northern India, during the winters only. This recipe will make you hooked on to it once you cook it.

Ingredients

  • 5 bunches fresh mustard leaves
  • 1 bunch fresh spinach leaves
  • 1 bunch bathua (pigweed)
  • 5 tablespoons cooking oil
  • 2 one-inch pieces ginger, sliced
  • 6-8 cloves garlic, finely chopped
  • 2 medium onions, finely chopped
  • 4 green chillies
  • 2 tablespoons cornmeal
  • salt, to taste

Yields: Serves 4

Instructions

  1. Heat three tablespoons cooking oil in a kadai/pan and add ginger & garlic and sauté for 1-2 minutes. Then add onion and sauté for 2-3 minutes.
  2. Add chopped mustard leaves to the pan and stir. The mustard leaves, spinach and bathua must be properly washed beforehand. Now add chopped spinach and bathua to the pan and stir. Add chopped green chillies to the pan.
  3. Add salt according to taste and stir well. Let it cook till the green leaves turn soft.
  4. Now dissolve cornmeal in some water and add it to the pan. Let the mixture simmer till the greens are completely soft and cooked. Switch off the gas flame and let it cool. Then grind the mixture to a coarse paste.
  5. Transfer the coarse paste into the pan and let it simmer for a few minutes. Add desi ghee or butter and serve hot with makki di roti.
