Seville Chicken

This is cooked slowly on the hob in a big pot.

I have tried this in the slow cooker, but it did not work as well as on the hob, the flavor seemed to not be so good as I had to add more stock so not to dry out.

It is also nice with a few black olives popped in at the end of cooking or afterwards

It also keeps well for leftovers too

Yields: Serves 4


  • 1 Orange
  • 6 Chicken Brests, Chopped
  • 1 Spanish Onion, Chopped
  • 2 Cloves of Garlic, Crushed
  • 2 Peppers one Red one Yellow, Sliced
  • 50g/2oz Flaked Almonds
  • 225g/8oz Brown Basmati Rice
  • 600ml/1 pint Chicken Stock
  • 40g/14oz Can of chopped Tomatoes
  • 175ml/6floz White Wine
  • Seasoned Flour, To dust chicken
  • 3 tbls Olive Oil
  • Pinch Dried Thyme
  • Salt and pepper


  1. With a vegetable peeler peel some orange rind from the orange, then peel the orange and cut into even segments, working over a bowl to catch any juice
  2. Dust the chicken with seasoned flour and fry in the olive oil until nicely browned all over and transfer to a plate
  3. To the pan add chopped onion and crushed garlic, fry until soft. Then add the peppers stirring occasional until they are soft also
  4. Add the almonds and rice, cook stirring for 1-2 minutes Pour in the stock, tinned tomatoes, wine, orange peel and dried thyme, season well and bring to a simmer
  5. Add in the reserved chicken back to the pot, and cook on a very low heat for 1-1.25 hours until the rice and chicken are tender. Before serving add the orange segments to the pot, and cook for a few minutes more.
  6. Season and garnish with fresh thyme and black olives
