Sharing Memories and Recipes: Cherry Cheese Delight

As we grow older, we change, and take a look at the important things in life. You can't sweat the little stuff or even carry a grudge forever. Family, friends, relationships, good times and good food outweigh all those trivial situations. Situations we viewed as a big deal, when we were young. However, you grow in many ways as you age. This is how it came about, when I decided to share this recipe with my ex-husband's wife. Years ago, I wouldn't have even considered sharing anything, let alone my recipe.

In blended families, if you share a son and a grandson, it makes for better relations when you can communicate. So here is one of my favorite recipes which blended past, present and future relationships.

Cherry Cheese Delight Ingredients





First, crumble the graham crackers in the bottom of a 9 x 13 baking dish. Melt butter on the stove or in the microwave. Use your own judgement on the texture or consistency you would like for your crust. Pour over graham crackers in baking dish. Smooth out in the bottom of the baking dish. Then place in freezer for a few minutes to let it set up until you've mixed the filling. Chill for at least ten minutes.


Place cream cheese in a mixing bowl. Next, add one cup of sugar. Blend until smooth. If cream cheese is soft enough, you can do this by hand. However, if you prefer you can use an electric mixer. After cream cheese and sugar is thoroughly mixed add in the Cool Whip. Blend together, thoroughly. 

The Final Steps

Now remove graham cracker crust from the freezer. Spoon cream cheese mixture over the crust. Smooth out completely. Now for the final touch, add can of cherry pie filling on top of the cream cheese mixture. Gently spread cherry pie filling across the cream cheese mixture. Cover and chill for at least 2 hours.

Through the years and many experiences, I have learned the little things are most important. My oldest son is now twenty-eight years old and I'm still very close with his step-mother.
