Needing something fast and easy that cooks while you're away? Try these shredded chicken sandwiches in a homemade barbecue sauce. These great sandwiches are easy to make and partner great with any kind of potato or salad.

This sandwich is perfect for any season and is so versatile it can even be whipped up in large batches and be served at pot lucks and large luncheon's.

Ingredients:

  • 4 Chicken breasts
  • 1/2 Tsp. Seasoned salt
  • 1/4 Tsp. Paprika
  • 1 Tbs. Oil
  • 2/3 cup Vinegar
  • 1/2 cup Ketchup
  • 1/4 cup Brown sugar
  • 1 Tbs. Brown mustard

Prep:

1.) Season chicken with seasoning salt and paprika.

2.) Pan sear or grill for about 8 mins.

3.) Combine oil, vinegar, ketchup, brown sugar, and mustard into a slow cooker.

4.) Add chicken and heat until cooked through. I simmer on slow for the whole day just to allow the sauce to soak into the chicken.

When I get home I turn it off and make the potatoes, or other side dish.

The Optigrill:

I use a counter grill called the Optigrill for all my indoor grilling. It's perfect for grilling indoors and even allows me to grill frozen chicken in those situations where I have forgotten to thaw the chicken the night before.

The Optigrill does all the work and even tells me how done the chicken is. The grill plates come out and are super easy to clean. The grill fits perfectly on my counter and I can grill 2 breasts of chicken at the same time.
