A Night In

I stumbled across this recipe and was a little bit hesitate at first but, I think of the possibility of a nice candlelight dinner for that special someone. So, I was willing to try this recipe and the recipe turned out great. I was a little bit apprehensive of preparing lamb but, it was easier than what I thought. Lamb can be served very elegantly on your "nice dishes," or china. Then you can add your personal touches such as a nice table cloth, fresh cut flowers and some kind of soft candles strategically placed around the table. The little extras that you put into thought for dinner, now can come to life.

Adding greenery to the plate adds some extra color to the plate. Some colorful green beans or corn could be served as side dishes.

If you know that your wife or girlfriend is fixing a nice meal, you might want to bring her some fresh flowers to decorate the table with. If you are the gentlemen fixing the dinner, I would still stop by the store and pick up some flowers, they are such a nice addition to a table. To me, it says, the use of fresh flowers, shows that you put some extra thought into the dining experience. The dishes that I use as my china are called Tiara. The color is a dark green and is a color that is easily matched up with other dishes. It looks nice but, is not over the top fancy.

This would be a great romantic dinner idea for spouse's birthday or even Valentine's Day. You could dress up in a nice outfit like you were going out to dinner but, have the dinner "in-house". It is good to know that you are loved and a great way to show your affection, is to do something nice for the one that you love. With our busy lives today we get caught up in our daily routines and simply forget to do something nice for our special someone. This sounds really horrible because, how surprised would that someone feel if you treated them to a romantic night unannounced.

Be sure that you know how to prepare the lamb or if you really want to make sure that the meal is a success, you can even stop and buy the food on the way home and then when you arrive home, put the food onto your own nice plates.

Imagine arriving at your friend's house to see a big platter of lamb steaks on the table as your main course. I am sure that anyone would be glad to get this as a main course to the meal.

A Difference In the Recipe

When you prepare the lamb in the skillet on the stove top, it would be a good idea to precook the onions after they have been chopped, not to mention chopping the carrots, as well as the celery. I am not a fan of these if the vegetables are "raw" so, I like to make sure that they are cooked so that they aren't crunchy. The longer that they cook, the more flavor the vegetables have.

Then, you will be good to combine all of your ingredients in the same pan. If you are not cooking the lamb in the crock pot, you could always bake it in the oven and let the meat cook on a rack in the pan. Also you might want to consider saving the drippings from the pan if you wanted to make gravy. The drippings from the lamb would make a great brown gravy that you can drizzle over the meat or you can serve the gravy warm in a gravy boat or a pretty serving bowl. Your guest will rave about the gravy and the lamb. The key to any good gravy is the drippings from the grease and meat that it was just cooked in. (Although, please note, you can't make gravy out of each meat you cook).

Ingredients

  • 3-3 1/2 lbs lamb or beef shank crosscuts
  • 1 tablespoon cooking oil
  • 1 cup regular barley
  • 1 medium onion, chopped
  • 4 (2 cups) carrots, cut into 1/2" slices
  • 3 (1 1/2cup) stalks of celery, cut into 1 1/2" slices
  • 1 (14oz) can chicken broth
  • 1 (14 1/2oz) can of tomatoes, diced
  • 1/3 cup water
  • 1/2 teaspoon pepper
  • 2 tablespoons balsamic vinegar (optional)

Instructions

  1. In a large skillet, brown the lamb shanks in hot oil over medium heat. Drain off the fat.
  2. In a large slow cooker, combine the barley, onions, carrots, celery, un-drained tomatoes, water and pepper. Then add the lamb shanks.
  3. Then you cover and cook on low-heat setting for 7-9 hours or until the lamb falls off the bone.
  4. You will want to make sure that the barley is tender.
  5. Remove the meat from the slow cooker. Skim off the fat from the vegetable-barley mixture.
  6. Stir in the balsamic vinegar, if desired. Serve with the lamb.

Serving Suggestions

Some serving ideas that I think would go well with the lamb would be a large mixed salad with fresh greens and anything that you would like in your salad. I would fix a couple of side dishes of vegetables. I love big crusty bread, such as Italian bread and I think this would go well with the lamb.

A couple of ideas for vegetables could be corn, carrots steamed broccoli and cheese, just for example.
