Simple Chicken Salad Recipe

This is something I whipped up last night as I was deciding what to eat. I had a chicken salad a few weeks ago at Johnny Rocket's that was so-so, so I decided to see if I could make one that was more to my tastes. I used broccoli as my main vegetable since I really don't like the taste of raw tomatoes, but you can substitute any vegetable you like.

Ingredients:

Iceburg Lettuce

1 Cup Steamed or Raw Broccoli

1 Cup Chicken Cubes (Breaded or Baked)

1/4 Cup Grated Mild Cheddar Cheese

Romaine Lettuce

Ranch Dressing and Pepper to taste

Cut baked chicken or chicken tenders into cubes and set aside. Fill a coffee mug with broccoli and pour in a little bit of water, adding just enough to wet broccoli. Cover with a napkin and cook in microwave for 3 minutes (you can omit this step if you wish to eat raw broccoli instead). While the broccoli is in the microwave, rinse lettuce and place in bowl. Add steamed broccoli and chicken. Pour desired amount of dressing and toss salad. Finish by sprinkling on grated cheese and a pinch of pepper. This recipe should feed one to two people, but you can double it if you're making one for a group of people (or if you have a REALLY big appetite).

      This sounds like it would make a great meal. I'll have to try it both ways as I like both tomatoes and broccoli. As to the broccoli, I would probably save the 3 minutes and add the broccoli raw as I like raw broccoli.
