Simple Cucumber Crab Salad Recipe
Introduction
This recipe comes from my son who decided to replicate a dish that we ordered at a local Japanese restaurant. He was successful in duplicating it and it is surprisingly simple.

Imitation Crab Meat
Cucumber
Wasabi Mustard Paste
Chia Seeds
Sauce Mix
Cut Cucumber
Shredded Crab Meat
How to Make It
Ingredients:
- 1/2 pound Imitation crab meat
- 1 large cucumber
- 3 Tbsp. milk
- 2 tsp. Chia seed
- 1/2 tsp. Wasabi Paste
- Large spoonful Mayonnaise
How to make it:
Defrost the frozen crab meat. Slice the cucumber into sticks. In a medium size bowl, mix milk, chia seed, wasabi and mayo into a paste.
Cut the crab sticks in half and separate into shreds by hand. Mix crab meat with cucumber and chill.
When ready to serve, mix the sauce with the cucumber and crab meats. Enjoy a refreshing side dish.
Makes servings for 4.
Some Tips...
Use the large gourmet cucumbers, they are easy to slice and both the skin and the seeds are edible. Soak the chia seeds in the milk for a few minutes to allow them to swell. Add the rest of the ingredients and mix. Keep the sauce separate in the fridge until serving time. This will keep the cucumber sticks crisp. At serving time, mix them well.
