Gluten Free and Tasty

We don't eat stuffing in our house anymore - too many carbohydrates and we're a gluten free house. So what do I do instead?

It's awesome and extremely easy. It adds incredibly subtle flavor and the moisture helps the bird whether it's a chicken, turkey or capon, to be juicy and succulent.

I use organic ingredients when I can, and there's only 3.

The health benefits of lemon, garlic and onions make this recipe feel good to make and even better to serve to people in your life. Because it has no carbohydrates it will cover everyone whose on a special diet too, so a good recipe for everyone at your table.

The flavor combination is wonderful and not strong, so no need to worry about the bird's flavor being overpowering. The moisture benefits achieved while roasting these in the cavity completely change the outcome; you'll never have a dry turkey or chicken again!

  • 4 to 6 lemons, halved
  • 2 to 4 onions, quartered
  • 2 to 4 garlic bulbs, whole or halved


  1. Clean the lemons well and cut in halves, put into big bowl, peel the onions and cut into quarters add to bowl, roughly remove the loosest skins of the garlic and cut into halves, add to the bowl. Give the contents of the bowl a stir then scoop and put into the cavity of the bird you are using. Close the cavity shut using steel skewers or sew it shut. Cook as per your recipe.
  2. Before carving or putting the bird on the table, remove the contents of the cavity and throw away. The onions, garlic and lemons are for flavor and tenderness, not for eating. Enjoy your tender turkey!

Garlic for Health

Garlic is a natural antibiotic.
