Simple bean and vegetable soup recipe 100% vegetarian
This is just a quick guide which shows you how to make bean and vegetable soup this recipe is 100% vegetarian however you could add a little bacon or chicken if you wanted. I find it is a great way to get your vegetables in it tastes delicious and doesn't require much preparation time at all.
First I start by adding a little olive oil to the pot in which you are going to make your soup a tablespoon enough. Now you want to chop one whole onion and a few cloves of garlic depending on how garlicky you want it and saute your onion and garlic for around 5 minutes or until your onion is translucent. Once you have done this you want to add the rest of your vegetables to the pot. I usually use carrots,Chopped tomatoes, potato, silver beet also known as Swiss chard, cannellini beans but you could use almost any vegetable you like. Once you have added your vegetables and beans to your put you need to add around 2 cups of water to the pot you could also add stock if you wanted however i never do and I don't think you really need to the vegetables create their own stock anyway. Now you need to leave the soup to simmer for a couple of hours.
Now that the soup has been simmering away for the past couple of hours you can start to prepare it for the blender by using a potato masher to start breaking up the vegetables this will also help to start thickening your soup. If you want you can leave it like this if you want some chunks of vegetables left in your soup it can be quite nice like this if you want your soup to be completely smooth then you will need to blend your soup with a stick blender.
Now it is time to serve your soup I always like to serve mine with a couple of slices of bread which I dip into the soup. This is a great meal on those cold winter days and also a great way to overcome the common cold. Below I will leave a video which shows you step by step how to make this recipe.
