Slow Cooked French Onion Soup

To me the key to making a good french onion soup is cooking the onions until they caramelize and the best way to do that is to cook the onions nice and slow ,,,,,don't rush them, the slower the better because the caramelizing is one of the way your going to get all the flavor, So come on and join me in making this classic soup dish.

Ingredients

1/2 stick of butter - unsalted

3 large yellow onions - thinly sliced

1 cup of dry white wine

2 - 14oz cans of chicken stock

2 - 14oz cans of beef stock

I - Tablespoon of Worcestershire sauce

1/3 Teaspoon of sea salt

1/3 Teaspoon of sugar

1/2 teaspoon of dried thyme leaves

1 bay leaf

4 slices of french bread - toasted

1 cup of shredded Swiss cheese

Methods

Using a large heavy skillet over a medium heat, melt butter then add onions, thyme, bay leaf, sugar and salt, stir and cook slow for 15 minutes stirring until the onions are soft and brown....Stir in the wine and let it simmer for a few minutes.

Using your slow cooker on low settings combine the onion mixture the chicken and beef stock, white wine and Worcestershire mix well then cook on low for 4 to 5 hours

Pre-heat oven to 500 degrees

When your soup is ready ladle your soup into 4 bowls top each with the toasted bread top that with the Swiss cheese place the soups on a cookie sheet and place them in the oven to melt the cheese...when cheese is melted remove from the oven and serve.
