Ingredients For Your Chicken And Dumplings
1. 1 ( 2 1/2 Pound ) Whole Chicken Cut Up.
2. 2 Teaspoons Ground Sea Salt.
3. 3/4 Teaspoon Black Pepper, Divided.
4. 1/2 Teaspoon Dry Powdered Garlic.
5. 1 Teaspoon Dried Thyme.
6. 1 Teaspoon Ground Cayenne.
7. 1 Quart Chicken Broth.
8. 3 Cups Self Rising Flour.
9. 1 Teaspoon Poultry Seasoning.
10. 1/3 Cup Shortening.
11. 2 Teaspoons Bacon Drippings.
12. 1 Cup Milk.
Pour the chicken broth in the pot over the chicken and then add enough water to cover the chicken. Add 1 1/2 teaspoons salt, 1/2 teaspoon black pepper, and next three ingredients. Cover the pot with a lid, reduce the heat, and simmer on medium heat for one hour. Remove the chicken pieces from the pot and set aside to cool.
Remove the skin and bones from your chicken after it has cooled and then chop up the chicken and return the meat to the pot. Add remaining salt and black pepper.
Combine the flour and poultry seasoning in a large bowl. Mix in the shortening and poultry seasoning and mix up very well using a large fork until the mixture resembles coarse crumbs. Add milk stirring until the mixture is moistened.
Turn dough out onto a lightly floured surface. Roll out to 1/8 inch thickness and cut up into small 1 inch pieces.
Bring the broth and chicken to a boil. Drop the dumplings, a few at a time, into boiling broth, stirring gently. Reduce heat, cover, and simmer stirring often for 25 minutes. You can make this recipe in a pot on the stove and then pour it into a crock pot to keep your chicken and dumplings warm and ready to serve.
My late mother used to grate up whole hard-boiled eggs and when she dipped up each persons bowl of chicken and dumplings she would sprinkle the top of each bowl of chicken and dumplings with the grated hard-boiled eggs. Try it and I bet you'll love them served with the grated hard-boiled eggs.
I also like to serve chilled whole berry cranberry sauce with each bowl of chicken and dumplings. I put a scoop of whole berry cranberry sauce on little saucers and each person gets one of the little saucers of cranberry sauce at their place at the table.
Some people like to put a small square of corn bread in the bottom of the serving bowl and then they put the chicken and dumplings over the corn bread square.

Over the many years I have been cooking I have tried and tried to come up with a delicious chicken and dumpling recipe for the slow cooker or crock pot and here it is. I promise if you follow the recipe carefully your chicken and dumplings will turn out perfect every time.
I use a lot of flavorful ingredients in my recipe that you may find unusual in a chicken and dumpling recipe but I promise if you give it a try you'll be delightfully surprised at the wonderful flavors you will experience when you taste these oh so wonderful chicken and dumplings.
I love Yukon Gold Potatoes and I have included them here in this recipe. If you can't find Yukon Gold Potatoes you can substitute other potatoes. But try to find the Yukon Gold Potatoes if you can.
Also check in your supermarkets produce section for fresh thyme and rosemary if they have it. If they don't then go with dried spices but the fresh spices will give you flavor you won't find anywhere else.
For Your Crock Pot Chicken And Dumplings you will need.
1. 6 - 8 Skinless Boneless Chicken Breast Half's cut into one inch cubes.
2. 4 Small Yukon Potatoes peeled and cut into one inch cubes.
3. 1 1/2 Cups Whole Baby Carrots and Green English Peas.
4. 1/2 Cup Of Celery diced in small pieces.
5. 2 Cans Regular Campbell's Condensed Cream Of Chicken Soup.
6. 1 Cup Chicken Broth. ( Full Flavor not low fat )
7. 1 Tablespoon Fresh Chopped Thyme.( Use 1 Teaspoon Dried Thyme )
8. 1 Tablespoon Fresh Chopped Rosemary. ( Use 1 Teaspoon Dried Rosemary )
9. 1 Teaspoon Ground Sea Salt.
10. 1 Teaspoon Black Pepper.
11. 2 Cups Bisquick (TM) Baking Mix.
12. 2/3 Cup Whole Milk.
You can if you wish add a 1/2 cup of onions to this recipe. I have made it with the onions and with out.
Place your chicken , potatoes , carrots , peas , and celery into a 6 quart slow cooker or crock pot. Stir your spices and soup mix up in a bowl and pour it into the crock pot or slow cooker.
Place the lid on your crock pot or slow cooker and cook for 7 - 8 hours on low until your chicken is cooked thoroughly.
Turn your crock pot or slow cooker up to high and let it get hot. In a bowl combine your baking mix and the milk and mix well. When the crock pot is hot drop the baking mix into the pot by the tablespoon full into the crock pot. Leave your crock pot lid ajar and let the dumplings cook until they are thoroughly cooked in the center.
These chicken and dumplings are wonderful served in a bowl over a square of cornbread made from Jiffy Cornbread Mix. The flavors are oh so wonderful and go together perfectly.
My Grandmother used to make Chicken And Dumplings and they were oh so wonderful. Its been many years but the recipe for the slow cooker chicken and dumplings taste so wonderful almost like the ones Grandma used to make.
